Can you freeze milk ?
I dont have time to cook often.. so when I do i make BIG portions of the meal and freeze it.. so all i have to do next time is thaw the dinner.
One recipe I have contains a sauce that is mainly milk. Could i freeze this meal ? If so.. for how long can i store it in the freezer ?

I'm sure you can, but I sure wouldn't want to drink it after that.
If it is a cream sauce. flour butter and so on yes .I wouldn't go more than a month or so. make sure it is in an air free freezer bag.
My family freezes milk all the time with no problems. Just make sure you stir or shake wekk after you that it out.
I do it all the time. If I freeze a gallon, to thaw I leave it on the counter all night. The next morning I shake it really well, there is usually a littl ice left. If you shake it really hard it usually breaks up the ice. But if you wanted to freeze smaller portions it might be easier to let them thaw in the fridge overnight.
We'd be in BIG trouble if you couldn't freeze milk. With 3 teens we buy it in bulk and freeze it for later use.
You can buy milk in the smaller containers, use powdered milk, or buy the big one and freeze what you don't use.
As for the preparation of the food...it's always best to freeze what ever you can, but I would make the sauce fresh with fresh milk, rather than making the sauce to freeze.
es. Anything liqid can be frozen, even though different liquids have diffferent freezing points than others.
However; little frozen tastes as good as before it was frozen. My advice would be to learn how to cook only the portion you need for a viable period of time. Once frozen you can keep it almost indefinately once you have it frozen. The problem comes when it is thawed and re-frozen. That's when you get into food safety issues.
While not really recommended, If it's a milk based 'sauce' it should be ok, it will separate, but you can manage by stirring or whipping when it's defrosted.
Milk may be frozen for as long as 3 months provided it is sealed well. Skim and 2% milk freeze better than whole milk. Thaw frozen milk/sauce in the fridge.

While pasteurized milk can be frozen; it may separate or be slightly grainy when thawed. Frozen milk works best for cooking, but you may find it's still okay for drinking.
Freeze milk in plastic freezer containers or special freezer-proof glass jars. Leave some extra space at the top since milk expands during freezing. If packaged in a wide-mouth container, leave 1/2-inch head space for pints and 1-inch for quarts. If packaged in a narrow-mouth container (such as jars), leave 1 1/2-inch head space for either pints or quarts.
Plan to use frozen milk within a month. Thaw milk in the refrigerator. Stir well before using.
If the sauce is cooked before hand, it may freeze OK.
While you can freeze the sauce, you're probably better off by cooking and freezing the other elements of the dish, then whipping up the sauce at the time you cook the whole thing. For example, if it's a casserole, you can cook and bag the meat, veggies, etc. separately, and then thaw the ingredients, whip up the sauce and throw the whole thing in the oven to heat up. It will free up your other ingredients to mix and match in other dishes as well.
