Not if you are as careful as when you deep fry anything. Our deep fryer came with a basket that you place the turkey in first, then you lower the basket into the oil. Follow your cooker's direction as to the amount of oil to use, you don't want an overflow, that would be very dangerous. We use between 4 and 5 gallons and the turkey is usually around 13 pounds. Don't go over 15 pounds, because the skin will begin to burn before the inside is thoroughly cooked. We've been doing this, even at Thanksgiving, for the past 10 years and everyone loves it! No, as long as you use the proper equipment. There are deep fryers designed specifically for this purpose; the fryer takes quite a bit of oil and the cooking needs to be done outside. The results are surprisingly good!
The biggest issue is going to be the open flame. When you put the turkey into the oil, there will be splashing.
The problem comes if it splashes out of the fryer onto the flame. That's when you get fires. The fires are oil fires, so they can't be put out with water....
Bottom line, fry your turkey outside.
no, not if you are very careful and are using a turkey fryer and the right kind of oil, which is peanut oil. also, do not use a marinade made with sugar in it. you also must cook the turkey outside.
