How long will homemade potato salad stay fresh?
I accidentally boiled to many potatoes and it's just me and my husband here.... I already know potato salad wouldn't freeze well, so I'm wondering how long would my potato salad stay safe to eat in the fridge?
Answers:
Make mashed potatoes with half then tomorrow or the next day add an egg, enough flour to make it stick together and a little bit of milk. Cook like pancakes....voila Potato Pancakes.
Serve with sour cream...yummy!

i cook professionally and i would only hold food that is prepared for 3 days only. if you feel the need , give some to a neighbor, or share with coworkers.

Potato salad is good usually 3-5 days if you keep it refridgerated and covered. Make sure that your refridgerator is kept at maximum 35 degree f.
You don't need to use all the potatoes for the salad. Make your usual amount. You can freeze the excess potatoes for use later. It's the dressing in the potato salad that doesn't freeze. You can freeze PLAIN boiled and baked potatoes up to about a month without worries.

Potato Salad will keep for about a week. Just don't put too much mayo or whatever on it, it'll keep better. If you want more mayo, just add it when you eat it.
My suggestion is to make Potato Pancakes- they're amazing! :D
put it in a air tight container and it should be good for at least 3-4 days max. anything longer than that i wouldn't touch because of the mayonnaise.
