Question:

Baked good recipes for hypoglycemic people?

I'm not a hypoglycemic, but a very good friend of mine is. She tutored me in history, and she's been going through a tough time because her dad is going through chemotherapy and radiation.
Any suggestions? Thanks!

I've been hypoglycemic since I was 14. The biggest thing the endocrinologist had my mother do (and I still follow to this day) is to forgo sugar and increase my protein intake. If you're going to bake something for her, try using the Splenda baking products. I've used them...use a little more of them because sometimes they aren't quite as sweet in baked goods. My compounding pharmacist put me onto Splenda when it first came out because it was the first product he could use in compounded medicines he made up for diabetics that wouldn't have an impact on their blood sugar levels. The same is true for someone with hypoglycemia.

If she is hypoglycemic, which means she has a low level of blood glucose, she would probably appreciate anything you make her. She's NOT a diabetic, or HYPERglycemic, is she?

Something with chocolate is always nice.
