Total Time: 5 hr 15 min
Makes: 16 servings

1-1/2 cups HONEY MAID Graham Cracker Crumbs
3 Tbsp. sugar
1/3 cup butter or margarine, melted
4 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
1 cup sugar
1 tsp. vanilla
4 eggs

PREHEAT oven to 325°F if using a silver 9-inch springform pan (or to 300°F if using a dark nonstick springform pan). Mix crumbs, 3 Tbsp. sugar and butter; press firmly onto bottom of pan.
BEAT cream cheese, 1 cup sugar and vanilla with electric mixer on medium speed until well blended. Add eggs, 1 at a time, mixing on low speed after each addition just until blended. Pour over crust.
BAKE 55 minutes or until center is almost set. Loosen cake from side of pan; cool before removing side of pan. Refrigerate 4 hours or overnight. Store leftover cheesecake in refrigerator.

Special Extra
Top with fresh fruit just before serving.

Old Fashioned Cheese Cake

INGREDIENTS:
4 tablespoons butter
4 tablespoons sugar
1 egg, beaten
1 cup flour
1 teaspoon baking powder
1/4 teaspoon salt

8 ounces cream cheese, softened
1/2 cup sugar
2 egg yolks, well-beaten
---
1 teaspoon lemon juice
1 teaspoon vanilla
1 tablespoon flour
1-1/2 cups milk
1/4 teaspoon salt
2 egg whites, stiffly beaten
---
1 pint raspberries
3/4 cup sugar
1 tablespoon cornstarch

PREPARATION:
Preheat oven to 350 degrees F. Mix first set of ingredients and put into 9-inch round spring form pan. Beat together cream cheese, sugar and egg yolks. Slowly add lemon juice, vanilla, flour, milk and salt. Fold in egg whites. Pour into pan. Bake for 45 minutes.
For topping combine last set of ingredients in a saucepan. Cook over medium heat until sauce is thick and clear. Cool and spread on cooled cheesecake. Refrigerate overnight prior to serving.

The Best Cheesecake
Crush 20 vanilla cookies
Butter Spring pan,and pad down crushed vanilla cookies.
Next , mix 4 egg whites till there's a peak,add one cup confectionery sugar,juice from one lemon,1 teaspoon real vanilla,then add two 8 oz s of philly cream cheese soft. Mix all ingredients well,place in oven at 350 degrees,then take out and top with-Mix one pint of sour cream,juice from a 1/2 a lemon,1/2 cup confectionery sugar,1/2 teaspoon real vanilla.Place back in oven at 40 degrees for 10 minutes.Let cool to room temperature,than leave in refrigerator for 5 hours.Add any kind of fruit on top ,like cherries,pineapple,mango slices, blueberries,strawberries,on the sides of the cake cut vanilla cookies in half and boarder around the cake.

well an easy one that i do is:

for the crust just use a grahm cracker one from the store...

then take 8 oz of sour cream, 8 oz of cool whip and 8 oz of cream cheese with one cup of sugar and a teaspoon of vanilla and mix it together ( easier if all are room temp ). then just put in the crust and chill for a few hours. it is real easy and really good. Then if you want to you can put the fruit on it or in it. i did one that i put in have the mixture, then a layer of strawberries and then the rest of the cheesecake and then more strawberries on top.
