Try this one out. Its cheating a bit but really quick.
Ingredients:
24 wonton wrappers
1 cup ricotta cheese (drained well)
1 cup chopped spinach
1/2 cup parmesan cheese, grated
salt and pepper
Pinch of nutmeg.
Directions:
1. In a large bowl mix Ricotta, spinach, nutmeg, salt, pepper and parmesan cheese.
2. Place 1/2 tablespoon of filling in the center of the wonton wrapper.
3. Moisten edges of wonton wrapper with water and fold in a triangular shape by joinin 2 opposite edges. Rub a little water on the edges and press firmly to seal.
4.Bring large pot of salted water to boil. Drop 12 Ravioli into boiling water at a time. Cook until ravioli floats. Drain well.
Hope this works. Its a quick recipe, taking just 10-15 minutes preparation and 10 minutes cooking time. If you prepare your sauce as the ravioli cook you should have a meal in 30 minutes.

Wonton wrappers work really well for any kind of ravioli! First I make a sauce in a large skillet with 2 large cans of crushed canned tomatoes, 2 cups of white wine, 1 chopped onion, five cloves chopped garlic, 1/4 cup chopped fresh basil, a little olive oil, and salt & pepper to taste. I cook that down until it's very pasty, with almost no liquid left, then add a pint of heavy cream and simmer five minutes. Set aside
I stuff wonton wrappers with a mixture of ricotta or creamcheese, grated asiago cheese, chopped fresh parsley and basil, finely chopped shrimp that's steamed until barely done, chopped sun-dried tomatoes, one egg, and salt & pepper to taste. Boil them in a very large pot of salted water until they float to the top. After that, place the sauce skillet back on medium heat, place the ravioli in the sauce, and heat five minutes, stirring very gently. If the sauce gets too thick, thin it with a little of the water you boiled the ravioli in. Serve with white wine, plenty of asiago cheese and a nice green salad on the side.
Beefy Baked Ravioli [6 serv; ready in 50min]
1 pound ground beef
1/2 (25 ounce) package frozen cheese ravioli
1 (14 ounce) jar spaghetti sauce
1 (14.5 ounce) can diced tomatoes, drained
1 cup shredded mozzarella cheese
1 cup shredded Monterey Jack cheese
1 tablespoon grated Parmesan cheese
Preheat the oven to 450 degrees F (230 degrees C).
Crumble the ground beef into a large skillet over medium-high heat. Cook and stir until no longer pink. Drain grease, then stir in the spaghetti sauce and tomatoes.
Spread 1/3 of the sauce in the bottom of an 11x7 inch baking dish. Arrange 1/2 of the ravioli over the sauce. Sprinkle 1/2 of the mozzarella cheese and 1/2 of the Monterey Jack cheese over the ravioli. Repeat layers, ending with the last of the sauce on top. Cover with aluminum foil.
Bake for 30 minutes in the preheated oven. Sprinkle Parmesan cheese over the top before serving.
Ravioli filling can be made with anything you have. Tasty leftovers work, just grind in a food processor and add ricotta and parm to bind the filling. Make the filling be a little over seasoned since there will be pasta with little flavor around it.
I f you want to start from scratch, cook some onions and garlic in o.o. and then add your main ingredient. When that is flavored/cooked/ grind it up, add cheese and spice, chill and then stuff your ravis. Good luck
