Summer main food dishes for teens?!

Summer main food dishes for teens?

what are some of the main dishes you make for really hot weather when you only want something cold to eat. my teenager says it is too hot to eat pork chops, chicken, ribs. and kielbasi in the summer. i know there are hundreds of side dishes for summer but what main food do you make with those summer side dishes.??

I asked: NOT FOR A SALAD OR ANY SIDE DISHES. LOOKING FOR A MAIN SUMMER DISH THAT IS MADE IN SUMMER TIME LIKE PORK CHOPS IN THE WINTER TIME. I DO GRILL ALL MEAT OUTSIDE BUT DAUGHTER(WHO IS 17YR) WOULD LIKE SOMETHING COLD!!!! FOR DINNER TIME. ALL THESE (7) ARE SALADS OR A HOT DISH- TOO HOT TO EAT WHEN 80 DEGREES DURING THE SUMMER TIME.

Tuna casserole.
Any type of fish is light.
Fruit plate.
Warm Chicken Salad.
hot dogs (you can buy the low fat hot dogs)

A fruit or melon salad with cubed jello in it.

Tuna or chicken salads with diced tomatoes or celery in it.

Close slaw that's slightly sweet and light on vinegar.

Banana & peanut butter sandwiches.

Yogurt with diced fruit and/or crushed nuts sprinkled on it.

All I can think of for now, but I hope it gives you some ideas. :)

Baked Omelet Pie
INGREDIENTS

* 1 large baking potato
* 6 eggs
* 1 teaspoon salt
* 1/2 teaspoon ground black pepper
* 1/4 cup chopped fresh parsley
* 2 tablespoons olive oil
* 1 onion, chopped
* 1/4 cup chopped red bell pepper
* 1/4 cup chopped fresh mushrooms
* 1/2 cup chopped ham
* 1 tomato, sliced
* 1/4 cup shredded Cheddar cheese

DIRECTIONS

1. Bring a medium pot of salted water to a boil. Add potato and cook until tender but still firm, about 15 minutes. Drain, cool, peel and slice.
2. Preheat oven to 350 degrees F (175 degrees C). Beat together eggs, salt, pepper and parsley.
3. In a cast iron skillet, heat olive oil over medium-high heat. Saute onion and red pepper until soft, then stir in mushrooms. When mushrooms start to shrink, add the chopped ham, potato and tomato slices. Pour in the egg mixture; gently stir to combine.
4. Sprinkle cheese on top of eggs and place skillet in preheated oven. Bake until eggs are firm, about 10 to 15 minutes. Allow to cool briefly before serving.

Amish Cinnamon Bread
INGREDIENTS

* 1 cup Amish Friendship Bread Starter
* 1 cup vegetable oil
* 1 cup white sugar
* 4 eggs
* 2 teaspoons vanilla extract
* 2 teaspoons baking soda
* 1 teaspoon baking powder
* 1 (3 ounce) package instant vanilla pudding mix
* 2 cups all-purpose flour
* 2 teaspoons ground cinnamon
* 1 cup chopped pecans
* 1 cup peeled, cored and chopped apple
* 1 cup raisins

DIRECTIONS

1. Preheat oven to 325 degrees F (165 degrees C). Grease three 9x5 inch loaf pans.
2. Place the starter in a bowl, stir in the oil, sugar, eggs and vanilla and mix well.
3. Combine the flour, baking soda, baking powder, instant pudding, and cinnamon. Add the flour mixture to the starter mixture and beat by hand. Add the pecans, raisins and apples and mix well. Pour batter into the prepared pans.
4. Bake at 325 degrees F (165 degrees C) for 1 hour.

Cappuccino Cooler
INGREDIENTS

* 1 1/2 cups cold coffee
* 1 1/2 cups chocolate ice cream
* 1/4 cup chocolate syrup
* crushed ice
* 1 cup whipped cream

DIRECTIONS

1. In a blender, combine coffee, ice cream and chocolate syrup. Blend until smooth. Pour over crushed ice. Garnish with a dollop of whipped cream and serve.

I know that this is still "warm" food, but I like grilled things in the summer. Like chicken and hamburgers.

best is fresh fruit salads

When you make chicken make extra, it's good leftover and cold. Pasta salads are good too, just throw in some leftover chicken or pepperoni or lunch meat chopped up.

What about cold meat such as ham or leftover roast meat. You can still have your salads but don't have to be stuck outside at the bbq.

Or a frittata or quiche served cold. You can make it while it is cooler inside then serve it cold at dinner time.

This frittata recipe would have to be my favourite but their are heaps of different ones,

salmon and dill frittata
6 eggs
1/2 C cream
1 t finely grated lemon rind
1 small red onion, thinly sliced.
1/2 C fresh chopped dill
2 T drained baby capers
200g canned salmon (smoked salmon is also nice for a treat)

Preheat oven to moderate. Oil a 20cm cake pan and line with baking paper. Whisk eggs, cream and rind in a bowl. Combine other ingredients and layer in pan with eggs. Bake uncovered for 30 minutes or until set.
