I think I've developed the perfect solution, but nothing being completely perfect, anything helps

I think the best way to cook squid is to put it on a fishing line and dunk it in the ocean. Then when you catch a real nice fish you put some lemon juice on the fish and bake at 350 for about 15 minutes. That squid will be yummy then.

squid is tough to cook perfect
either cook very quickly (saute or grill) until it is just cooked through, If it goes to long it will be tough but the longer it cooks it will soften up.
No either real quick or real long

The best squid I've ever had came from a little hole in the wall Italian place in town. First the squid was breaded & fried, then covered in maranara sauce & melted cheese.....Yummy!!

Just sprinkle with garlic salt and put on the b-b-q , whole for a max of two minutes each side any longer it will be tough the longer you cook squid the more tough it will get ...

Dry Squid Curry

Slice it up and fry it with egg, spring onion and spicy curry powder. add some soy sauce to taste

Cut it into rings and dust it with cornflour mixed with salt, pepper and cayenne. Deep fry for 2 mins and serve with sliced chillies and spring onions. Crispy salt and chilli squid - gorgeous.

Squid Stuffed with Spinach and Ricotta Cheese
Serves 6

12 squid, about 6 inches each, cleaned.

1/2 lb ricotta cheese
2 lbs fresh spinach, steamed lightly, and
liquid squeezed out
1/4 cup grated Parmesan cheese
1/2 tsp black pepper
1/4 tsp grated nutmeg
2 Tbl finely minced fresh parsley
1 egg, slightly beaten

2 Tbl olive oil
2 cloves garlic, finely minced
1.5 lbs plum tomatoes, pureed in blender
1 Tbl tomato paste
1/2 tsp fresh rosemary or 1/4 tsp dried

1.5 Tbl butter
3 Tbl pine nuts or sunflower seeds

Cut off tentacles so that you have just the body cavity. Make
sure to keep it whole so you can stuff it without leaks. Reserve
the tentacles.

Mix together the ricotta, spinach, Parmesan, pepper, nutmeg,
parsley and egg. Set aside.

Heat the oil at medium in a large heavy skillet or saucepan.
Add the garlic. Stir and cook for a few seconds. Add the tomatoes.
Bring to a boil and add tomato paste. Lower heat and add rosemary.
Simmer sauce for 25 minutes, stirring occasionally.

While the sauce is simmering, stuff the body of each squid only
about 1/3 full of the spinach/cheese mixture. If you overstuff
them, they will explode. You might also want to poke a hole or
two in the body of the squid. Fasten the opening of each squid
with a toothpick.

After the sauce has cooked, place the stuffed squid in the
simmering sauce. Add the tentacles to the sauce. Simmer for 3
to 4 minutes. Then turn carefully and simmer for an additional
3 minutes.

While the squid is cooking, melt the butter in a clean pan and
toss the pine nuts in the butter until golden. Watch carefully;
pine nuts have a tendancy to burn.

Lift out stuffed squid to a warm, flat serving dish with sides.
Spoon sauce around and garnish with pine nuts.

Squid is delicious..but a little tricky to make..
One way I make it ..is in a tomato sauce..
First I wash the squid..then cut it into little circles.. Tentacles as well
In a saute pan I pour in a little olive oil, add chopped onions, garlic, paprika,a couple of jalapeno peppers (sliced in small circles as well, grate some fresh ginger(you can also dice up a couple slices of lien bacon..optional..but adds delicious flavor)Let everything brown together..
In a sauce pan pour in a jar or large can of tomato sauce..Bring it to a slow simmer..Add all the goodies you just sauteed..(optional a cup red wine can be added to the sauce)..Bring everything to a slight simmer..Now add your sliced squid..Be careful not to over cook..Otherwise the squid will get rubbery..Just keep a low flame under the sauce for a few minutes...Wait a while let everything just settle for a while..
You can put this over white rice..ummm.Absolutely delicious..Enjoy!
