Easy Vegan Pancake Recipe
* 1 cup flour
* 1 tbsp sugar
* 2 tbsp baking powder
* 1/8 tsp salt
* 1 cup soy milk
* 2 tbsp vegetable oil

PREPARATION:
Combine the flour, sugar, baking powder and salt in a large bowl until well mixed.

Mix in the soy milk and oil and beat together until batter is smooth.

Drop 1/4 cup of batter at a time onto a hot oiled griddle, or well greased frying pan over medium high heat. When bubbles appear on the surface of the pancake, approximately 3 minutes, flip, and cook the other side for another 2 minutes. Enjoy!

You can buy packaged mixes where you just add water. That's pretty simple. I think it's made by Bisquick. We take them with us camping and they are good.

This is the one I use.
Classic Pancakes

Makes 12 pancakes.

1 egg
1 ? cups milk
2 tbsp butter, melted, or vegetable oil
11/2 cups all-purpose flour
I tbsp baking powder
I tbsp granulated sugar
? tsp salt

1- In large bowl, beat together egg, milk and butter. In separate bowl, whisk together flour, baking powder, sugar and salt; pour over egg mixture and stir until almost smooth.
2- Heat skillet or griddle over medium heat; brush with oil or unsalted fat (optional for nonstick pans). Pour about ? cup batter for each pancake into skillet; cook for 1 1/2 to 2 minutes or until underside is brown and bubbles break on top but do not fill in. Turn and cook for 30 to 60 seconds longer or until underside is golden brown. Repeat with remaining batter, brushing skillet with more oil as necessary.

VARIATIONS
Buttermilk Pancakes: Increase eggs to 2. Use 2 cups buttermilk instead of 1 1/2 cups milk. Use 1 tsp each baking powder and baking soda instead of 1 tbsp baking powder. If batter is too thick, add a little water.
Blueberry Pancakes: To either Classic or Buttermilk pancake batter, stir in 1 cup fresh wild blueberries, mixing with as few strokes as possible.
Buckwheat Honey Pancakes: Use ? cup buckwheat flour and ? cup all-purpose flour instead of 1 1/2 cups all-purpose flour. Substitute liquid honey (buckwheat, if available) for sugar.

Good Old Fashioned Pancakes:
INGREDIENTS:
1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar 1 1/4 cups milk
1 egg
3 tablespoons butter, melted
DIRECTIONS:
1. In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

1 cup flour
1/4 tsp. salt
1 tbs. baking powder
2 tbsp. sugar

Mix the above together to distribute the ingredients evenly. To this dry mixture add:

1 egg
2 tbsp. oil OR 1/4 cup melted butter
enough milk or buttermilk to make a thick batter

Mix till all dry ingredients are moistened. Don't be afraid of little lumps. Let the mixture rest for 5 minutes and then you know what to do from there.

I have used this recipe for a number of years. one cup of flour, third a cup of baking powder, half teaspoon salt, three teaspoons sugar, three whole eggs third a cup of veg. oil and milk. Mix the dry ingredients then mix the eggs and oil, put into dry mixture. Lastly, start adding the milk slowly while stirring until you get a nice smooth mix, if you get it too runny, just add a little more flour, its not all that hard...Enjoy!

australian banana pikelets
1 1/4 c self raising flour
2 egg whites
1/4 c sugar
1/2 tsp sugar
1/2 tsp bicarb soda
3/4 c skim milk
3/4 c mashed ripe bananas (2-3 bananas)
Beat egg whites, sugar & milk tog. for 1 min in a medium size mixing bowl
in sep. bowl mash bananas add bicarb soda stir (it will foam a bit)
add bananas to wet ingredients
gently fold in flour till combined
coat a frypan with cooking spray (elect frypan works great)
drop spoonfuls onto pan, when mixture bubbles & looks dry turn over & brown on other side.
eat hot or cold
can also use blueberries but add after flour just before cooking.
