How to spice up some pickled wild leeks?

I've washed and cleaned some wild leeks and have them soaking in the fridge in a jar of vinegar right now. I'd like to add something to spice it up a bit, while either preserving or enhancing the natural flavor. Any ideas?


Answers:
I think it will be a bit late now but slice some onion and leave in salty water overnight and drain.
Add and see what happens.
Next time add some pickling spices to you leeks

When yo say spice it up I think or what my dad does to everything. Put peppers in it. That will spice it up and also help preserv them. Get canning jars and place them in them in vinegar water and add canning salt and peppers if you like that stuff. Close the tops real good and you have just canned your leeks. They should stay like that like hot peppers do for a long time. My dad has me help him can every year. Have fun .

grape leaves will help them stay crisp , garlic , parsley , peppercorns , and corse salt .

Change to: cups US Metric
1 cup white wine vinegar
1/2 cup sugar
1 1/4 teaspoons kosher salt
1 teaspoon whole coriander seeds
1/2 teaspoon fennel seeds
1/4 teaspoon whole black peppercorns
1 pinch crushed red pepper flakes (optional)
2 sprigs fresh thyme
10 ounces ramps, trimmed and well rinsed
Mix together wine vinegar, sugar, salt, coriander seeds, fennel seeds, peppercorns, red pepper flakes(if using), thyme and 2 cups water in a med large saucepan.
Bring to a boil and add ramps. Return to a boil, reduce heat, and simmer til tender, about5-7 minutes.
Take off heat, let cool about 1-2 hours.
Refrigerate in their liquid in an airtight container up to 1 month. Enjoy!

Try chili garlic sauce. You can find it at chinese groceries or in the ethnic food section of most grocery stores.

WHERE did you find wild leeks and how can I get some?

Chopped chile pepper and minced garlic would go great with wild leeks. It already has a tang, because of course you've added the vinegar, now the chili pepper and minced garlic will definitely incorporate some spice to it.
