Chicken Masala

Ingredients
1 kg chicken
4 tbsp. curd (plain yoghurt)
1 tsp. turmeric powder
1 cup onion, finely chopped
1 tsp. ginger powder
1 tsp. garlic powder
2 tsps chilli powder
2 tsps coriander powder
1/4 cup oil
Salt to taste


Directions

Cut chicken into pieces and marinate with curd and salt and keep aside for an hour.
Heat oil and fry turmeric.
Add onion and fry till light brown.
Then add ginger and garlic mixed in a tbsp. of water and stir well.
Then add chilli and coriander mixed in 4 tbsps water. Stir well until the oil comes out clear.
Now add the chicken and sufficient water to make good sauce.
Cover and let cook on gentle heat till chicken is done.

Isn't masala spelled with an "R"- chicken maRsala? And shouldn't it have mushrooms in it?

4 - 6oz chicken breast (lightly pounded)
8oz- sliced mushrooms
4oz - chicken stock
4oz - veal stock
1oz - minced shallots
2tble - butter
3oz Dry Marsala wine
flour

1: Pound the chix to 1/2in
2: season with S & P and dredge in flour (lite)
3: heat reg pan with extra virgin olive oil (no non-stick pan)
4: sear chix on both side for 3min per
5: push chix to the side of pan a add shallots, mushrooms, then place the chix on top for 1min.
6: deglaze with Dry Marsala wine for 20sec.
7: Add stocks and reduce by 75% (about 4min)
8: Off the heat add butter and combine into the sauce.
9: Finish with S & P to taste

I've never even heard of Chicken Marsala having peas....so there should be no problem finding a recipe without them.
