1/4 bunch cilantro
3 limes, quartered
1 liter light rum
1 ounce simple syrup (see note)
1/2 ounce lemon juice
1/2 ounce lime juice

For cilantro-infused rum, place cilantro and limes in an airtight container. Add the rum. Leave mixture in container for one week. This makes enough rum infusion for about 12 cocktails.

When ready to serve, fill shaker with ice and add 1 1/2 ounces of cilantro-infused rum, 1 ounce simple syrup, and the lemon and lime juice. Shake well and strain into an ice-filled glass.

Makes 1 serving.

Note: To make simple syrup, fill a corked bottle halfway with super-fine sugar, the other half with water. Shake vigorously until most of the sugar dissolves, about a minute. The liquid will remain cloudy for 5 minutes. After it clears, shake again briefly.
