i've never made it before, and i've only eaten it a few times, but i thought it was really good. i can't imagine it being too hard to make...

I started with a recipe about 15 years ago and have made so many adjustments to it that I almost can't read my own recipe card any more! I tend to stay away from some of the less-traditional ingredients like corn and cheese, but it's a matter of taste. This version is good though.
--4 medium potatoes, peeled and cut in 1-inch pieces
--2 tablespoons soft butter
--1/2 cup whole milk
--salt to taste
Bring the peeled potatoes to a boil in a medium saucepan of salted water. Boil until easily pierced with a fork, 10-15 minutes. Drain them and return them to the hot pan. Mash with a potato masher or ricer. Stir in the butter, then stir in the milk (start with 1/3 cup and add more if you think they're too thick). When the milk and butter are well mixed in, take a fork or a wire whisk and beat them briskly for a minute or two. This incorporates air into the potatoes for a good fluffy texture. Set them aside while you make the filling. Don't worry about keeping them warm because they are going to be baked in the oven.
--3 slices bacon, chopped
--1 small onion, peeled, coarsely chopped
--10 or 12 fresh mushrooms, cleaned, halved or thickly sliced depending on their size
--1/2 cup carrot, chopped (fairly finely, because it takes longer to soften than the other vegetables)
--1 pound lean ground beef
--1 1/2 teaspoons dried thyme or 3 teaspoons chopped fresh (you can use rosemary instead, but thyme is my favorite)
--3 tablespoons flour
--1/2 cup beef broth
--1/2 cup dark beer, porter or stout
--2 tablespoons steak sauce (believe it or not, I find it really boosts the flavor of the sauce)
--2 teaspoons Worcestireshire sauce
--optional: 1/2 cup frozen tiny peas
--salt and pepper to taste
--optional: chopped fresh parsley for garnish
Choose a pie dish or similar-sized baking dish and have ready, In large skillet, cook the bacon until some fat is rendered. Add the onion, mushrooms and carrot; cook over medium heat until vegetables are beginning to soften, 5 to 8 minutes. Put the pan contents into the baking dish. Add the ground beef to the skillet, turn up the heat a bit, and cook the beef, breaking it up into chunks, until no pink remains. Add the vegetable/bacon mixture back in and add the thyme; stir.
Sprinkle the flour over and stir for 2 minutes. Add the broth, beer, steak sauce and Worcestershire; simmer, stirring, until the sauce thickens somewhat. Taste to see if it needs more salt or pepper. If you're using the peas, stir them in (still frozen) now. I usually leave them out and serve them as a side dish instead...your call.
Preheat the oven to 375. Line a cookie sheet with foil so you don't make a big mess in your oven.
Pour the filling into the baking dish and use a spoon to even it out. Then plop big spoonfuls of mashed potato over the surface and carefully smooth them out all the way to the edges. Sometimes I use the tines of a fork to make a design in the potato, sometimes not.
Bake until the filling is bubbling up around the edges of the dish (and onto the foil), 30 to 40 minutes. By that time the potatoes should be forming a lightly browned "crust" on top. If they still look pale when the filling is done, heat the broiler and give them about 2 minutes to get some color (watch carefully).
Let sit 4 or 5 minutes. Sprinkle with the chopped fresh parsley, if using, before serving.

I made this Wednesday night and my son, who's not usually a big eater, put away 2 helpings and wanted a third...hope you have fun with it.

Sorry, shepherds are not in season until July. You'll have to make it with lamb or beef.
INGREDIENTS
1 pound lean ground beef
1/2 cup chopped onion
1/2 cup chopped celery
1 (10.5 ounce) can condensed vegetable soup
1/2 teaspoon dried thyme
3 cups mashed cooked potatoes
1 cup shredded Colby longhorn cheese
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C) and lightly grease a 2 quart baking dish.
In a large skillet over medium-high heat, stir and cook ground beef, onion and celery until juices run clear. Drain. Pour mixture into baking dish with vegetable soup and thyme; stir well. Spread mashed potatoes on top.
Bake 20 minutes. Sprinkle shredded cheese on top and bake 5 minutes more, or until cheese has melted.

Yuummm... Sounds great! I see someone's sent you a recipe. It's different with different restaurants, everybody does make it different. I tasted it once with tomatoes, corn, string beans, mashed potatoes, lean ground beef, and maybe even cheese on top. I'd like that recipe, myself! Too Jay's, a local restaurant, has it without the tomatoes. It's not too bad, either. Just always a little different. --- Mark me down for a copy of the best recipe. Ha... GOOD LUCK!!
It is very easy to make and very filling.....the list of ingredients I use in my Shepherd's pie are as follows......
1-1/2 pounds of ground beef
1-2 cans of golden kernel corn
1, 8 oz or 12 oz bag of shredded cheddar cheese
1 jar of Ragu or Prego spaghetti sauce of your choice
2-3 cups of instant potatoes or 4-6 medium sized cooked potatoes and mashed....
In skillet brown ground beef (can add seasoning if you would like, I add onions and bell peppers to my mixture with the ground beef)
Drain ground beef of fat
Combine jar of Ragu or Prego sauce with meat mixture, put in baking pan this will be the bottom layer of pie.
Add corn on top of meat mixture, this is the second layer
Add cooked mashed potatoes on top of corn mixture, this will comprise the 3rd layer of the pie
Lastly, add the cheddar cheese on top of potato mixture and cover with foil.
Let bake for 45 minutes and remove foil and bake for an additional 10-15 minutes until cheese is melted and browned at 350 degrees....Enjoy
brown hamburger meat and drain
make a slurry of 1 cup water and 3 tablespoons flour
whisk it up good and dump it in the pan check for salt and pepper with the hamburger meat let it thicken pour that into a casserole dish put mashed potatoes on top and sprinkle cheese on it...bake 400 for 20 Min's
I use leftover mashed potatoes sometimes I brown onions and bell pepper in the meat as well ..mushrooms can be added as well..instead of a slurry you could use cream of mushroom ..remember this is a get by meal..a hobo thing...usually made from cheap ingredients and leftovers
This is so delicious, I often make it just replacing garbanzo with "cooked kidney beans with tomato paste"
Vegetarian Sheppard Pie:
4 medium potatoes, peeled and quartered
1/2 cup potato water
1/4 teaspoon salt
1/4 teaspoon onion powder
8 ounces black beans or
1 1/2 cups garbanzo beans, cooked
1 cup frozen corn, thawed
1 cup frozen peas, thawed
1/3 cup peanut butter
1/2 cup water
paprika
Preheat oven to 350. Place potatoes in a large saucepan, and add just enough water to cover. Boil for 15-20 minutes, or until tender.
Drain potatoes, reserving liquid. Mash cooked potatoes with hot water, salt, and onion powder.
Add additional liquid if desired. Set aside. Combine beans, corn, and peas in a 9 inch pie pan. In a separate bowl, whisk together peanut butter and water, until smooth. Pour sauce evenly over vegetables. Top with mounds of mashed potatoes. Sprinkle with paprika. Bake for 30-40 minutes, or until potatoes start to brown.
Serve hot or at room temperature.
Shepherd's Pie is an English dish, traditionally made with lamb or mutton. Americans typically make Shepherd's Pie with beef. The English (and Australians and New Zealanders) call the beef dish a "cottage pie". Naming conventions aside, Shepherd's Pie is essentially a casserole, lined with cooked meat and vegetables, topped with mashed potatoes, and baked.
Here is a basic recipe for a simple ground beef Shepherd's Pie. The original recipe comes from my friend Frances Hochschild and her mother (thanks Frannie!). We dressed it up a bit with some veggies and Worcestershire sauce.
1 1/2 lbs ground round beef
1 onion chopped
1-2 cups vegetables - chopped carrots, corn, peas
1 1/2 - 2 lbs potatoes (3 big ones)
8 tablespoons butter (1 stick)
1/2 cup beef broth
1 teaspoon Worcestershire sauce
Salt, pepper, other seasonings of choice
1 Peel and quarter potatoes, boil in salted water until tender (about 20 minutes).
2 While the potatoes are cooking, melt 4 Tablespoons butter (1/2 a stick) in large frying pan.
3 Sauté onions in butter until tender over medium heat (10 mins). If you are adding vegetables, add them according to cooking time. Put any carrots in with the onions. Add corn or peas either at the end of the cooking of the onions, or after the meat has initially cooked.
4 Add ground beef and sauté until no longer pink. Add salt and pepper. Add worcesterchire sauce. Add half a cup of beef broth and cook, uncovered, over low heat for 10 minutes, adding more beef broth as necessary to keep moist.
5 Mash potatoes in bowl with remainder of butter, season to taste.
6 Place beef and onions in baking dish. Distribute mashed potatoes on top. Rough up with a fork so that there are peaks that will brown nicely. You can use the fork to make some designs in the potatoes as well.
7 Cook in 400 degree oven until bubbling and brown (about 30 minutes). Broil for last few minutes if necessary to brown.
Serves four.
