3 pounds russet (baking) potatoes (6 to 8 medium; preferably organic)
1 small head garlic (2 inches in diameter)
3/4 stick (6 tablespoons) unsalted butter, softened
1 teaspoon salt
1/4 teaspoon black pepper
Serving Suggestion: Onion and spinach dip, recipe follows


Preheat oven to 350 degrees F.
Prick each potato once or twice with a fork. Cut off and discard top fourth of garlic head; then wrap garlic tightly in foil. Bake garlic and potatoes on same rack in lower third of oven until potatoes are tender, 50 minutes to 1 hour. Remove potatoes from oven and cool on a metal rack 15 minutes. Continue to bake garlic until tender, about 15 minutes more, then cool in foil on rack.

While garlic cools, halve potatoes lengthwise, then quarter each half (to form short wedges). Scoop out potato flesh (reserving it for another use), leaving 1/4-inch-thick potato skins.

Increase oven temperature to 425 degrees F.

Squeeze garlic into a small bowl, discarding garlic skins, and mash to a paste with butter, salt, and pepper using a fork.

Divide garlic paste among potato skins (about 1/2 teaspoon each), spreading evenly, then roast skins in a large shallow baking pan (1 inch deep) until golden and crisp, 20 to 25 minutes.

Cook's note: Potato skins can be scooped out and spread with garlic paste (but not baked) 1 day ahead and chilled, loosely covered with foil. Bring to room temperature before baking.


Onion and Spinach Dip:
3 tablespoons extra-virgin olive oil
1 large onion, chopped (1 3/4 cups)
1/2 pound shallots, chopped
1/2 pound baby spinach, coarsely chopped
3 ounces cream cheese, softened
1 (16-ounce) container sour cream
1/2 teaspoon salt
1/4 teaspoon black pepper

Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then saute onion and shallots, stirring, until lightly browned, about 2 minutes. Reduce heat to moderate and continue to cook, stirring occasionally, until softened, about 8 minutes more. Add spinach and cook, stirring, just until wilted, about 2 minutes. Remove from heat and cool slightly.
Transfer spinach mixture to a bowl, then stir in cream cheese, sour cream, salt, and pepper until combined well. Chill, covered, at least 1 hour.

Cook's Note: Dip can be chilled up to 1 day (though the spinach will lose some of its color). Let stand at room temperature 15 minutes before serving.

if the host didn't specify what people should bring, you can bet there will be a couple of bowls of potato salad and a couple of bowls of cole slaw. Tyr this for something beyond the norm. My family loves it ( ialways add more bacon than specified )
Tangy Broccoli Salad


Prep Time: 20 min
Total Time: 1 hr 20 min
Makes: 12 servings, 1/2 cup each

3/4 cup MIRACLE WHIP or MIRACLE WHIP Light Dressing

2 Tbsp. sugar

2 Tbsp. white vinegar

1 medium bunch broccoli, cut into florets (about 6 cups)

6 slices OSCAR MAYER Bacon, crisply cooked, crumbled

1/2 cup chopped red onion


MIX dressing, sugar and vinegar in large bowl.

ADD remaining ingredients; mix lightly.

REFRIGERATE at least 1 hour before serving.

How about a non-mayo pasta salad with veggies? I like a spinach-orzo-lemon salad with feta. It always holds up well and the dish is empty when I leave, so it must have been good!

macaroni salad,potato salad,a fruit salad,jello,baked beans. anything that is easy to eat and doesn't have top be reheated and will keep in the heat.

I just answered one about what's good to take to the beach and I'll answer yours the same...
A huge pasta salad-add cubed cheese, pepperoni or salami, olives, artichoke hearts, peppers, broccoli, tomatoes-any kind of veggie you like-all in an italian dressing ( I use good seasons and add balsamic vinegar as well as red wine vinegar). This keeps well without refrigeration and is a real crowd pleaser. If you do add broccoli, cauliflower or carrots just steam them very briefly and cool so they aren't raw tasting.

Fried chicken, mac & cheese, candy yams w/marshmallows, biscuits, spanish rice w/beans and sausage bits, shrimp or chicken curry w/green beans, spinach fettucini aglio olio, crabmeat salad, jerk chicken

A great big homemade Apple Pie.Ice cream and Whipped cream optional.

Big chunks of cut up ice cold watermelon with feta cheese on the side. The sweet watermelon plus salty feta are an amazing combination.

Every body will tell you something but i found that if there is no special list take what you remember being your favorite thing at cook outs that way if you don't know people very well or your like me just don't eat every ones cooking at least there will be something you like and know the cook hope this helps

TEXAS COUNTRY POTATO SALAD

4 c. cubed cooked potatoes
1 c. chopped celery
3 chopped hard cooked eggs
? cup. Chopped red onion
? cup. dill pickle relish
2 tbsp. chopped parsley
2 tbsp. chopped pimento

Dressing:
1 qt. Miracle Whip
1/2 c. sugar
1/2 c. vinegar
3-4 tsp. prepared mustard
1 tsp. salt
1 c. sour cream (1/2 pt.)


Combine potatoes with the 6 other ingredients mix lightly. Combine dressing ingredients stir well. Pour over the potatoes and Chill 1 hour.

THREE CHEESE BAKED MACARONI

3 c. elbow macaroni (cooked and drained)
1 can Cheddar cheese soup
1 c. milk
1/4 tsp. salt (optional)
1/4 tsp. pepper
1/2 c. shredded Swiss
1/2 c. shredded Cheddar
1/2 c. grated Parmesan
1 can French fried onions
Preheat oven to 350 degrees.
In 1 1/2 quart casserole, mix hot macaroni, soup, milk, seasonings and 1/4 cup of each Swiss, Cheddar and Parmesan. Add 1/2 can fried onions. Bake uncovered at 350 degrees for 25 minutes or until heated through.
Top with remaining cheese and onions. Bake uncovered 5-8 minutes until cheeses are golden brown. Makes 4-6 hearty servings.

Vegetable Rotini Salad

3 cups tri colored pasta
1 cup chopped cucumbers
1 cup halved cherry tomatoes
? cup sliced black olives
? cup Zesty Italian Dressing
? cup chopped red onion

TOSS all ingredients in large bowl
Cover and refrigerate at least one hour

But I really like it when someone brings a Taco and bean dip with corn chip scoops.

COLE SLAW.
Grate some carrots,red onions, red and green cabbage, add a pinch of sesame seed and toss with some vinaigrette and away you go

These are ALWAYS a hit when I cook them- I promise if you make them you WON'T be sorry.

Baked beans
3 large cans of Bush's country style baked beans
1 large chopped onion (vidalia or yellow)
1 large chopped green pepper
brown sugar (i don't measure, i just pour and taste)
1 cup maple syrup
Thick cut bacon

Pour beans into a large bowl and mix all ingredients EXCEPT bacon.
Pour mixed contents into a baking dish and add strips of bacon (enough bacon to kinda cover the top, but not completely covering it)
Bake at 350 degrees until bacon is browed and beans are bubbly.
