Answers:
Classic Mignonette Sauce

1/2 cup dry white wine
1 tablespoon sherry vinegar
1 shallot, finely chopped
white pepper to taste
salt as needed


Place wine and vinegar in saucepan and reduce to one-half. Turn off the flame and stir in the shallot, white pepper and salt as needed (remember: oysters tend to be salty). Set aside to steep.

As you shuck your oysters, collect their juices and add to the
mignonette sauce. Serve the sauce in small dishes or ramekins, letting your guests spoon it on top of each chilled, raw oyster on the half shell.

Depends on how your serving them. for raw oysters i like a mignonette. spicy and vinegary. also works well for grilled oysters. you can find various recipes on the internet. check out epicurious.com or starchefs.com.

For raw oysters and for steamed clams I like:

1 Cup of Fav Cocktail Suace
1/4 Cup shredded Horseradish
2 tsp Garlic Powder
1/2 Lemon Squeezed

Mix all together and enjoy!

Oysters Rockafeller
2 slices bacon
24 medium fresh live oysters, unopened
1 1/2 cups cooked spinach
1/3 cup breadcrumbs
1/4 cup chopped green onions
1 tablespoon chopped fresh parsley
1/2 teaspoon salt
1 dash hot pepper sauce
3 tablespoons extra virgin olive oil
1 teaspoon anisette (anise-flavored liqueur)
4 cups kosher salt

Preheat oven to 450°F.
Clean oysters and place in a large stockpot.
Pour in enough water to cover oysters; bring the water and oysters to a boil.
Place bacon in a large, deep skillet.
Cook over medium high heat until evenly brown.
Drain, crumble and set aside.
Remove pot of boiling oysters from heat and drain and cool oysters.
When cooled break the top shell off of each oyster.
Using a food processor, chop the bacon, spinach, bread crumbs, green onions, and parsley.
Add the salt, hot sauce, olive oil and Anisette, process until finely chopped but not pureed, about 10 seconds.
Arrange the oysters in their half shells on a pan of kosher salt.
Spoon some of the spinach mixture on each oyster.
Bake 10 minutes until cooked through, then change the oven's setting to broil and broil until browned on top.
Serve hot.

For raw oysters, I just make a homemade cocktail sauce...

1 cup ketchup
2 tablespoons grated fresh horseradish
Dash of hot pepper sauce
Dash of Worcestershire sauce
1 tablespoon fresh lime juice

But I love them roasted on the grill...
This is one of Bobby Flays recipes that I absolutely love..

1/2 cup extra-virgin olive oil
1/4 pound unsalted butter
1 tablespoon chopped garlic
1/4 tablespoon red chili flakes
1/4 cup chopped shallots
1/4 cup chopped red bell pepper
1/2 cup chopped Italian parsley
6 shucked oysters, shells reserved

Combine everything but the oysters in a saucepan. Let sauce ingredients simmer over low heat for about 15 minutes.

Place each oyster back in its shell. Spoon about 1 tablespoon of sauce onto each oyster and place in a covered BBQ kettle to cook for 5 minutes. Serve immediately.
