I am grilling salmon - thinking of blackening?

anyone have any better ideas. i plan to head to the fish house in 1/2 hr. I am also going to do tuna steaks on the grill - can i beg a recipe from you for this too.

Here's what I do when grilling Salmon. It makes the salmon juicy and savory.

Ingredients:

* fillet of salmon, with skin
* salt and peppers
* 3 tablespoons extra virgin olive oil
* 1/2 cup dry mustard (such as Coleman's)
* a little sugar, 1 teaspoon/pound
* oregano powder

Instructions:

* Prepare the charcoal grill. Make sure to leave it until it's really hot. You can see white ash coating the coal when it's ready. After that shift the coals into one side of the grill.
* Sprinkle both salmon sides with salt and peppers LIGHTLY
* Place the salmon into the cool side of the grill, the skin side down
* After the skin becomes crisp, turn it around
* Cover the salmon in stainless steel bowl so that the heat from beneath directly penetrates the fish
* Leave it 15 minutes
* Open the cover and brush all the salmon with olive oil and sprinkle it with Oregano
* Grill it again for the final 5 minutes

for the salmon use a bottle of Italian dressing and lemon pepper season put it in a pan completely cover with dressing then season with lemon pepper then grill, for the tuna i would cut up onions, red,green,yellow peppers squeeze a fresh lemon and add that to one egg,and two caps full milk season that with garlic and paprika mix well brush tuna then wrap in foil with pepper and put on grill

Why would you ant to eat a blackened fish?

Tuna -salt and pepper, olive oil then grill. It is very simple and you will not be covering up the taste of the fish.

I made Salmon on the grill last week and I marinated it first with lemon juice, soysauce, and Mrs Dash. Marinate for 30 minutes then grill. Splash lemon on fish before serving...Yummy!!!

Grilled salmon is a fabulous idea i would stick with it but you can certainly jazz it up a bit. The best way to grill it is to get yourself a bottle of soy vay which is an amazing basic Chinese marinade loaded with sesame seeds available in most local markets. I would marinade the the fillet's in that for as long as possible. You should then make little tinfoil pouches and place a filet in each pouch with about 3 tablespoon in the soy vay you should then add some veggies to the pouch. I think broccoli and eggplant go amazing together. You fold up the pouches and place them right on the grill for about 10 minutes. Instead of it being grilled it will be steamed with the veggies but will taste grilled and have the flavor of a stir fry. Serve over rice.
