BREAKFAST POTATOES
1 lg. bag frozen hash browns
1 can cream of chicken soup
1 can cream of celery soup
3/4 c. Cheddar cheese, shredded
1/2 pt. sour cream
1/2 green pepper, chopped
1 tbsp. onion, chopped
Combine all of the above in large casserole dish or 9 x 13 inch pan. Pour 3 to 4 tablespoons melted butter and then 3/4 cup shredded cheese over above mixture. Bake at 300 degrees for 1 1/2 hours.

BREAKFAST POTATOES
Potatoes, sliced (according to number and size of potatoes)
Onions
2 tbsp. shortening or fatback grease
1/2 tbsp. black pepper
1 tsp. salt
2 c. water
Preheat heavy black iron frying pan. Preheat shortening 10 to 15 minutes. Add potatoes to hot shortening. Add onions, salt, and pepper on top of potatoes. Put top on pan and steam cook 10 minutes on high. Stir every 10 minutes to brown potatoes. (Total cooking time is 20 minutes.) Add 2 cups of water and steam at high for 8 minutes until water recedes. Add 1 cup of water. Turn down heat to medium or low until thickens. Serve with sausage or eggs.
