Well you could do good old fried potatoes. Before you fry them add a little salt, pepper, and some sliced onions( or onion powder.)

I like to add green pepper, red pepper and onion to my potatoes. Then some garlic powder, salt, pepper and a dash of season salt (for that extra kick). I have never had one complaint about my taters :-)

My kids won't touch them if I put in anything other than potatoes (that they can see), so I slice or cube them, sprinkle them with seasoned salt, garlic powder, and a little onion powder, and then fry them in olive oil -- lots of flavor without any colors the kids might see!
Well here is how I do it, and everyone I make it for always want to watch me cook so that they can learn it. Of course you wanna peel your potatoes, then cut them into large cubes all about the same size. Heat a skillet on med to high heat for about 30 seconds. Add some vegetable oil or canola. Then drop in your taters. Coat them all over with the oil. Then season with seasoning salt, pepper, garlic powder, & thyme if you like it or have any. Let them cook for about 7 to 10 mins. Once they have some good color on them, pour about 1/3 cup of water in them (hot or warm), and cover. Let steam until potatoes are the tender enough for you or easily cut with a fork. Don't over do it though or they will be mushy. If there is still water in the pan and your taters are tender, take the topp off and let water cook off. I like to put cheddar cheese or a coulpe of slices of american and then put the top back on without a flame and let the cheese melt. I would perfect the technique before you try to get adventerous and add bell peppers and onions. Especially onions because they are prone to burning in oil. If you do want to add other veggies chop them and add them to your oil before you put in your taters. Hope this helps!! :)
I take as many potatoes as you want cut and cube, take a stick of butter melt it in glass 9x13 baking dish, in a 400 degree oven when butter melts put in potatoes. Sprinkle a little garlic powder (very little) onion powder to taste. Leave in 15 min, take out turn over with spatula, put back in another 15 or until brown and crispy, then last 5 min pull out sprinkle paprika for color. Enjoy!!!!!!!
You can shred potatoes to make hashbrown potatoes and add minced onions and diced green peppers to them. Place them in a skillet with alittle oil and butter and brown. If you want a one skillet dish, crumble some sausage and cook this first, add potatoes to them, cook and then add some eggs and cheese. Great any time! If you have any sausage gravy, put that over them too.
