Crawfish Cream Sauce?
I'd like to make Crawfish Cream Sauce to top my salmon tonight as a special treat to my honey. Anyone have a good recipe?
Maybe a lightened version without heavy cream?

This is a simple and yummy recipe.
4-6 oz salmon fillets
1 lb. craw-fish tails, shells removed
12 oz. half and half cream
1 cup fresh spinach, cleaned and chopped
2 oz. Swiss cheese
1/2 cup white wine
3 TB butter
4 TB flour
1/4 tsp. garlic powder
1 tsp. Worcestershire sauce
Non-stick vegetable spray
1/2 tsp. cayenne pepper (more if you like spicy foods)
1/4 cup green onion (green tops only)
Salt and white pepper
In a one-quart sauce pan, melt butter over medium heat and add flour. Cook, stirring constantly for about three minutes. Do not allow to brown!
Add half and half, wine, spinach, garlic powder, Worcestershire sauce, cayenne pepper and a teaspoon of salt. Stir constantly over medium heat until thick and creamy.
Add craw-fish tails and cheese and cook for about three to five minutes, stirring occasionally.
Spray a large sauté pan with non-stick vegetable oil and heat on high until very hot. Season salmon fillets with salt and white pepper. Add fillets to pan and cook over medium-high heat until done, turning once or twice.
Place cooked filet on plate, top with sauce and a sprinkle of green onion.

Ingredients:
1 Tbs. olive oil
1/2 cup small diced Tasso sausage
2 Tbs. minced shallots
1 lb. crawfish tails
1 Tbs. minced garlic
1/2 cup peeled, seeded, and chopped Italian Plum tomatoes
1/2 cup chopped green onions
1 1/2 cup heavy cream
2 Tbs. butter
1 lb. angel hair pasta, cooked al denta
1/2 cup Parmesan Cheese
2 Tbs. chopped chives salt and pepper
In a large saute pan, heat the olive oil. When the oil is hot, render the Tasso for 2 minutes. Add the shallots and crawfish and saute for 1 minute. Stir in the garlic, tomatoes, and green onions, saute for 1 minute. Season the mixture with salt and pepper. Stir in the cream and bring up to a boil. Reduce the heat to a simmer and cook for 4-6 minutes or until the sauce has reduced enough to coat the back of a spoon. Season the sauce with salt and pepper. Stir the butter into the sauce. Add the pasta to the pan and gently toss the pasta into the sauce. Garnish the pasta with the grated cheese and chives.
** difficult to make cream sauce without heavy cream but you could try part milk if youd like but it will take away from the flavor a bit....

ETOUFFEE
1 lb. uncooked & cleaned shrimp or crawfish
1/2 c. onions, chopped
1/2 c. green pepper, chopped
1/2 c. celery, chopped
1 stick butter
Salt & pepper to taste
1 can cream of mushroom soup
Picante sauce at end to taste (optional)
Over medium heat, saute onions, peppers and celery in butter until brown. Add soup and simmer 10 minutes. Add crawfish or shrimp and cook about 30 minutes. May need to add a little water to make more juice. Serve over cooked rice.
You can make a cream sauce without heavy cream, but you will need a thickening agent. Either cook some flour in a little olive oil (since it is heart friendly fat) and use that for a base for your sauce, and add milk to give it the creaminess or use corn starch that has been diluted with water to thicken the sauce. Parmesan cheese also a good choice.

3/4 cup heavy cream
3/4 cup crawfish, cooked
directions:
melt butter in a large skillet over medium-high heat. Stir in green onions, garlic, and Creole seasoning. Add cream and lower heat to medium. Stir until mixture is reduced by half, about 5 minutes. Add crawfish and stir for about 30 seconds or until just heated through. Season with salt and pepper, to taste.
