Little Italy pasta bake

340g/12oz macaroni pasta
1 large can red salmon
handful of basil
250ml/9fl oz passata (sieved tomatoes)
3 tbsp mascarpone
85g/3oz breadcrumbs
140g/5oz fresh mozzarella
30g/1oz pine nuts
30g/1oz butter
To serve:
200g/7oz bag mixed salad leaves
virgin olive oil
balsamic vinegar
salt and freshly ground black pepper

Method
1. Preheat the oven 190C/375F/Gas 5.
2. Cook the pasta in plenty of boiling salted water as per instruction.
3. Place the salmon into a bowl, removing any large bones.
4. Tear the basil leaves and combine with the salmon. Add the passata, mascarpone and mozzarella.
5. Drain the pasta and combine with the salmon mixture.
6. Season well and place in an ovenproof dish.
7. Top with dots of butter and sprinkle over breadcrumbs and pinenuts

or Spinach & Pasta Bake

8oz (225g) pasta shells
8oz (225g) fresh spinach
1 medium onion
2 cloves garlic
olive oil
1 pint béchamel sauce, see separate page
4oz (100g) grated cheese

Method

Half fill a large pan with cold water, add a good shake of salt and bring to the boil. Add the pasta, stirring once to make sure the pasta is separated. Bring back to the boil and turn down the heat slightly so the water boils fairly vigorously. Partially cover and leave to cook for about 10 minutes until just cooked or 'al dente'. As soon as it is cooked, drain in a colander and then put it back into the hot pan to keep warm. If you are using fresh pasta it will only take 3 minutes to cook.
Peel and slice the onion, peel and crush or finely chop the garlic and fry in a little olive oil until soft. Keep to one side.
Wash and shred the spinach.
Make the béchamel sauce and whilst it is hot add 3oz (75g) of the grated cheese, mixing it in to the sauce.
Mix the cooked pasta with the spinach, onion and garlic in an oven proof dish and pour over the sauce. Stir it all together then top with the remaining 1 oz (25g) of grated cheese and cook at 190°C 375°F Gas Mark 5 for 20 minutes.

boil 1 lb. of elbow macaroni. mix it with 1/2 block of velveta cheese, 1 block cream cheese, salt, pepper, and top with some bread crumbs and butter. bake and enjoy.

Chicken.
Poach your chicken pieces in some stock and set aside, until cool enough to handle, and de-bone.
Pasta.
Place in salted boiling water and cook until you get the degree of cooking you like.
Penne or Elbows will do very well here.
Sauce.
Make a normal white sauce and add some grated tasty cheese, remove from heat and stir until it is smooth.

Combine everything and place in an oven proof dish, sprinkle with more cheese and bake until it is bubbling and the cheese has melted and started to brown.

This is super cheesy...

Penne with 5 Cheeses
Kosher salt
2 cups heavy cream
1 cup crushed tomatoes in thick tomato puree
1/2 cup freshly grated Pecorino Romano (1 1/2 ounces)
1/2 cup shredded imported Italian fontina (1 1/2 ounces)
1/4 cup crumbled Italian Gorgonzola (1 1/2 ounces)
2 tablespoons ricotta cheese
1/4 pound fresh mozzarella, sliced
6 fresh basil leaves, chopped
1 pound imported penne rigate pasta
4 tablespoons (1/2 stick) unsalted butter

Preheat the oven to 500 degrees F.

Bring 5 quarts of salted water to a boil in a stockpot.

Combine all the ingredients except the penne and butter in a large mixing bowl. Mix well. Drop the penne into the boiling water and parboil for 4 minutes. Drain well in a colander and add to the ingredients in the mixing bowl, tossing to combine. Divide the pasta mixture among 6 shallow ceramic gratin dishes (1 1/2 to 2 cup capacity). Dot with the butter and bake until bubbly and brown on top, 7 to 10 minutes.

Here is one of my family's favorites...(sorry I don't have exact measurements, I eyeball everything)

Ingredients:

Box of Ziti (penne can be substituted) - cooked
Italian Sausage (you can use hot or sweet, I use both)
canned tomatoes (chopped, italian seasoned recommended)
diced onion
finely chopped garlic
sweet peppers (any color you like)
fresh basil
oregano
ricotta cheese
mozzarella cheese
crushed red pepper (optional)
salt
olive oil

Directions:

Squeeze the sausage out of the casings (it cooks faster this way and you can drain off alot of the fat), break it up as you cook it (like you might do if you were cooking hamburger meat for a sauce). Once it is cooked, drain it and set it aside.

Using the same pan (in my house we call it dish conservation) saute the garlic, basil, oregano, onions, and peppers for about 2-3 minutes (long enough to bring out the aromatics but not long enough to cook it, that will be done in the oven).
Add the canned tomatoes to the mixture remove from heat (this allows the flavors to mingle with the tomatoes for a few minutes).
Then mix all remaining ingredients (except mozzarella) together and bake for about 20 minutes at 375.
Sprinkle the top with the shredded mozzarella and bake for about 5 minutes or until the cheese is melted and slightly golden...
Let it set for about 10 minutes after you take it out of the oven... Then serve it up.

This recipe is pretty basic and doesn't take too long but it is a hit with young and old!

I have a pasta bake recipe, to call it good would just be wrong!

Macaroni cheese.
Lasagne
Cannelloni.

Cook macaroni (al dente - not soggy), drain. Make a white sauce and stir in grated cheese, although not Italian I find Cheddar works well although here in Switzerland I use a mixture of crumbled Gorgonzola and grated Parmesan. Put the macaroni in an oven-proof dish, pour the cheese sauce over the pasta and stir through. You can add some sliced tomato if you like. Sprinkle grated Cheddar or Parmesan over the top and put under the grill until the cheese starts to bubble and go brown.

If necessary pre-cook Lasagne leaves and drain (sea packet).
Make small amount of thick cheese sauce and a pasta sauce of your choice (Bolognese for example). Layer pasta sauce, cheese sauce and Lasagne in an oven proof dish ending with a layer of cheese sauce. Sprinkle top with grated cheese and pop under the grill etc.

Cannelloni - as for Lasagne - if necessary pre-cook cannelloni tubes and stuff with pasta sauce of your choice. Put in an oven-proof dish, spread remaining sauce over, sprinkle with grated cheese and...

boil the pasta
mix it with:
tomato or bolognese sauce or mix veg in tom.sauce
add diced mixed cheeses like mozzerella, ricotta, mild cheddar
add some ham and salami
sparkle some parmesan on top
bake it until the top looks crusty

Italian Pasta Bake

Ingredients 14oz pasta
penne pasta
Salt and pepper
10oz ham, cut into strips
Butter for greasing
3 eggs
? pint single cream
6oz grated cheese
2oz grated parmesan cheese

Method 1). Preheat oven to 190 C/ 375 F/ Gas 5.
2). Put pasta in a pan of boiling water and cook until just tender. Drain well.
3).Stir the ham strips into the pasta and put in a greased ovenproof dish.
4).Beat together the eggs, cream and seasoning, and add half the grated cheese. Pour over the pasta.
5). Sprinkle the remaining grated cheese and the Parmesan over the top and bake for about 40 minutes, until golden.

As an alternative to ham, use crisply fried bacon, salami, or even good old sausages, cooked and thinly sliced.
