What makes some ice creams chewy or elastic?

There is an ingredeint that is used in making ice cream which makes it sort of chewy or elastic. What is that item?


Answers:
xanthan or guar gums

I think the "chewy" ice cream is of the cheaper variety. Probably has guar gum, or a lot of high fructose corn syrup.

They put Jello mix.
