Arroz a la Mexicana (Mexican Rice) Recipe
Ingredients:
2 cups rice
1 large onion, chopped
2 cloves garlic, crushed
4 cups chicken or beef stock
1 1/2 cup tomatoes, peeled, seeded, and chopped,
or
1 1/2 cup canned tomatoes
1/4 cup olive oil
1/2 cup frozen or fresh green peas, cooked
Salt and freshly ground black pepper to taste
Optional garnishes: chili pepper "flowers" (fresh, hot chili peppers,
sliced from the tip to the stem into 4 or 5 sections and immersed in
cold water until they curl back to form "flowers"), fresh coriander or
parsley sprigs, 1 large avocado, peeled and sliced.


Directions:

Puree the tomatoes, onion, garlic, and 1/2 cup (125 ml) of the stock in an electric blender or food processor. Heat the oil in a saucepan and saute the rice until it turns golden. Add the tomato puree, remaining stock, and salt and pepper to taste. Bring to a boil, lower the heat to a simmer, and cover until almost all of the liquid has been absorbed (about 15 minutes). Mix in the peas and continue cooking until all the liquid has been absorbed. Garnish with the optional garnishes.

Helen's Spanish Rice Recipe
Ingredients:
1 cup rice
1 pound lean ground beef
1/2 onion -- chopped
3 tablespoons vegetable oil -- or bacon fat
1 garlic clove -- minced
1/2 green bell pepper -- chopped
2 1/2 cups stewed tomatoes
1 teaspoon salt
2 teaspoons chili powder


Directions:

Wash rice, drain, and allow to dry thoroughly. Heat oil in heavy skillet; add rice. Cook, stirring constantly, until lightly browned, about 10 minutes. Add onions, garlic, green peppers and beef. Stir often to break up and brown meat; cook until onion is limp and lightly browned. Add undrained, chopped tomatoes and seasonings. Cover and simmer about 25 minutes or until rice is tender and most of the liquid has been absorbed. Let stand, covered, for about 5 minutes before serving.

SPANISH RICE WITH CHICKEN

1 1/4 cup of long grain rice rinsed
6 chicken breast strips
2 cups of chicken broth
4 tsp olive oil
2 tsp cilantro
3 cloves chopped fresh garlic
1 small can of tomato sauce
1 cup frozen or canned corn
red pepper (optional)
1 pkg taco seasoning mix
salt & pepper

Rinse rice, add only 2 teaspoon olive oil to prevent sticking, Use chicken broth instead of water. Boil, then simmer 20 minutes in a separate pan.
Simmer 20 minutes; add 2 more teaspoon olive oil. Saute chicken; cook just 5 minutes turning once, then add to cooked rice mixture and serve.

KYLE'S SPANISH RICE

1/2 lb bacon, cut up in bite-size pieces
1 onion chopped
1 cup rice
1 can diced tomatoes
1/2 cup water
2 teaspoons salt
1 teaspoon cumin
2 teaspoons garlic
1 teaspoon chili powder

In a large saucepan, fry bacon until crispy. Add onion, rice and spices. Fry until rice is lightly browned and onions are nearly clear. Add diced tomatoes and 1/2 to 3/4 cup of water. Bring to a boil.
Reduce heat and simmer for 20 minutes or until rice is tender.


SPANISH RICE PORK CHOPS

1 box Spanish rice
1 can whole tomatoes
1 sm. jar pimentos
1/2 c. diced green peppers
1/2 c. diced onions
Pork chops

Spread pork chops out in a baking pan. Use the amount of water directed on Spanish rice box; add to rice and all other ingredients. Pour, uncooked, over pork chops. Cover with foil and bake at 375 degrees for 2 hours.

SPANISH RICE CASSEROLE

1 1/2 lb. ground beef
1 lg. can ranch style beans
2 cans ranch style Spanish rice

Ground meat and drain. Mix in ranch style beans and Spanish rice. Put in dish and add cheese on top. Cook at 350 degrees for 25 - 30 minutes.

Spanish Rice

toasty.Meanwhile, drain the tomatoes, reserving juice. Chop tomatoes. Add water to juice to make 2 cups. Add liquid to pan, along with remaining ingredients. Bring to a
simmer, lower heat, cover and cook until
rice is cooked and liquid is absorbed,
about 20-25 minutes.

put 1 stick butter and 2 tablespoons chili powder,teaspoon salt, and 1 cup rice in a big pan
saute that for ten mins or so and add a can of crushed tomatos and a small can of red chilis in adobo sauce

I call it my Hot mama mia rice...

the easiest thing would be to buy a box of spanish rice at the grocery (it'll be with all the other boxed rices). i use this recipe as a main meal, it's a bake. it's really easy, and really good.

Spanish Rice Bake

1 pound lean ground beef
1/2 cup finely chopped onion
1/4 cup chopped green bell pepper
1 (14.5 ounce) can canned tomatoes
1 cup water
3/4 cup uncooked long grain rice
1/2 cup chile sauce
1 teaspoon salt
1 teaspoon brown sugar
1/2 teaspoon ground cumin
1/2 teaspoon Worcestershire sauce
1 pinch ground black pepper
1/2 cup shredded Cheddar cheese
2 tablespoons chopped fresh cilantro

Preheat oven to 375 degrees F (190 degrees C).

Brown the ground beef in a large skillet over medium-high heat. Drain excess fat and transfer beef to a large pot over medium low heat.. Stir in the onion, green bell pepper, tomatoes, water, rice, chile sauce, salt, brown sugar, cumin, Worcestershire sauce and ground black pepper.

Let this simmer for about 30 minutes, stirring occasionally, then transport this to a 2-quart casserole dish. Press down firmly and sprinkle with the shredded Cheddar cheese.

Bake at 375 degrees F (190 degrees C) for 10 to 15 minutes, or until cheese is melted and bubbly. Garnish with chopped fresh cilantro.

Veronica's Easy Spanish Rice:

45 min 5 min prep
6 servings 6 cups

1 cup uncooked rice
1 medium onion, chopped (I like onions so I used a large one)
2 tablespoons vegetable oil (I used olive oil)
2 1/2 cups water
1 (8 ounce) can tomato sauce
1 small green bell pepper, chopped
1 1/2 teaspoons salt
3/4 teaspoon chili powder
1/8 teaspoon garlic powder

1. In a large skillet, heat the oil over medium heat.
2. Add rice and onion and cook (about 5-10 minutes) stirring occasionally, until rice is golden brown and onion is tender.
3. Stir in remaining ingredients and bring to a boil.
4. Reduce heat, cover and simmer for about 30 minutes, stirring occasionally, until rice is tender.

Spanish Rice

2 tablespoons vegetable oil
1 cup uncooked white rice
1 onion, chopped
1/2 green bell pepper, chopped
1 cup water
1 cup chicken broth
1 - 10 ounce can diced tomatoes and green chilies (I like to use diced tomatoes with basil and oregano and no chilies)
2 teaspoons chili powder, or to taste
1 teaspoon salt

Heat oil in skillet. Saute rice, onion and bell pepper until rice is browned and onions are tender.

Stir in water, broth and tomatoes. Season with chili powder and salt. Cover and simmer on low heat for 30 minutes or until rice is cooked and liquid is absorbed. Try and resist the urge to stir the rice while it is simmering.
