What is a crumb glaze for cake and how do you make it?

Its pretty much a protection coat, so the crumbs wont get mixed with your icing. Put a thin layer of this over your cake before icing. Refrigerate for an hour or untill the coat dries. All you do is take about 1 cup of your icing and mix 1-2 Tablespoons of water with it. It just makes a really runny icing.

Do you mean crumb coat? If so it is a thin layer of frosting you put on a cake that sticks the crumbs down. Then you can frost the cake without having the crumbs show.

Are you referring to a glaze to set the crumbs so they don't show up in your frosting? If so, take a small amount of your frosting and add a little bit of water until it is fairly runny but still spreadable. Spread a very thin layer over the entire cake (top and sides) and let it set up before you frost the cake. This is especially useful if you have a dark cake like chocolate and want to frost it with a white or light colored icing. This method "sets" the crumbs so they don't get picked up by your knife or spatula when you are frosting the cake.

I almost always use a buttercream frosting for this technique. It thins out well and dries firm so the crumbs are well set. Good luck with your cake!

Recipe for crumbly streusel topping on coffee cake
1/4 cup melted butter
add 3/4 cup brown sugar
3/4 cup flour
1/4 cup walnuts
1-2 tsp cinnamon
Place all ingredients in food chopper and mix.
Use for topping before baking coffee cake.
