Spicy BBQ Sauce
4 tablespoons butter
1 onion, diced
4 garlic cloves, crushed
1/4 cup firmly packed brown sugar
2 cups tomato ketchup
1 cup water
1 teaspoon dry mustard
4 tablespoons cayenne pepper
1/2 cup lemon juice
1 teaspoon soy sauce
6 tablespoons Worcestershire sauce
4 tablespoons white distilled vinegar
In a large saucepan, heat butter on medium until melted. Add diced onion and crushed garlic cloves and cook while stirring until lightly browned. Stir in brown sugar, ketchup, water, dry mustard, cayenne pepper, lemon juice, soy sauce, Worcestershire sauce, and vinegar. Bring to a boil; reduce the heat to low, and simmer for 15 to 20 minutes.
Makes about 4 1/2 cups.

2 Tbl Margerine
1 medium onion
1 glove garlic minced
1 cup ketchup
2 Tbl vinegar (red wine will do0
1 tsp tobasco sauce
1 Tbl brown sugar
1 tsp salt
1 tsp dry mustard
1/4 cup water.
Add additional tobasco or lousiana hot sauce to taste.
Put all together in pan and bring just to a boil. Multiply ingredients for more.

SPICY BARBECUE SAUCE (makes about 1-1/2 cups)
Mix together in a small (1-1/2 quart) saucepan:
3/4 cup catsup
2 Tbsp (veggie) Worcestershire sauce
1/2 cup water
6 Tbsp red wine vinegar
1 Tbsp brown sugar
1 small bay leaf
Mix together in a small bowl (blend well):
1 tsp dried oregano
1 Tbsp paprika
1/2 tsp garlic powder
1 tsp (or more) chili powder
1/2 tsp ground cloves
1 tsp cracked black pepper
2 Tbsp whole mustard seeds
2 tsp Spice Islands hickory smoked salt
2 Tbsp onion powder
Add dry ingredients to liquids and mix well. Bring mixture to a boil,
then simmer 1 hour over low heat. Covered or not; it splatters if you
don't cover it but if you don't mind cleaning up your stove the sauce
thickens up more if it's uncovered. (take out the bay leaf!)
Spicy BBQ Sauce
1 medium onion
1 head garlic (minced)
1-2 cup brown sugar
5 cups ketchup
1 cup water
1 teaspoon dry mustard
2-3 tablespoons cayenne pepper
4 tablespoons lemon juice
1/4-1/2 teaspoon liquid smoke
7 tablespoons worcestershire sauce
4 tablespoons vinegar
1 cup steak sauce
13 ounces tomato puree
1/2 cup oleo
1/2 cup olive oil
1/4 cup canadian steak seasoning
Add minced onion and garlic to olive oil and sweat. Then add liquid ingredients. Add dry mustard, Canadian Seasoning and then the Cayenne pepper 1 tablespoon at a time to suit your taste. Be sure to stir in and cook to get full impact of the pepper.
Cook together until heated through.
Put in sterilizes pint jars and process allotted time. Cool and store in cool dry place.
Makes about 8-10 pints.
Can double recipe but watch the cayenne pepper it's wise to add it slowly. The amounts can be adjusted to suit your personal taste. This is quite spicy, but Good!

Ingredients
6 Cloves Garlic
2 Cups Ketchup
2 Stalks celery
1 Cup ;Water
1/2 Cup Onion; chopped
1/2 Cup Brown sugar; firmly packed
1/2 Cup Butter or margarine
1/2 Cup Worcestershire sauce
1/2 Cup Cider vinegar
3 Tablespoons Chili powder
2 Teaspoons Instant coffee granules
2 Teaspoons Dried crushed red pepper
1/2 Teaspoon Salt
1/2 Teaspoon Ground cloves
Directions
Bake garlic in a small baking pan at 350 degrees F for 20 to 30 minutes or until lightly browned. Cool and peel. Combine garlic and remaining ingredients in a saucepan. Bring to a boil; reduce heat, and simmer 20 minutes. Cool. Pour mixture into container of a blender; process until smooth, stopping once to scrape down sides. Recommended with chicken.

1 garlic clove, crushed
2 tablespoons oil
2 tablespoons of your favourite fruit chutney
1/2 cup tomato sauce (ketchup)
1/4 cup wine or cider vinegar
1/4 cup water
1 tablespoon Worcestershire sauce
1 tablespoon brown sugar
salt and pepper
Gently fry onion and garlic in the oil until the onion is transparent.
Add remaining ingredients, stir, cover pot and simmer for 15 minutes.

SPICY TEXAS BBQ SAUCE
1 c. catsup
Juice from med. lemon
1 tbsp. vegetable oil
2 cloves garlic, chopped
1 can (12 oz.) beer
1/2 c. packed brown sugar
1 tbsp. ground red peppers
1 tbsp. Worcestershire sauce
1 lg. onion, chopped (about 1 1/2 c.)
1 can (12 oz.) tomato paste
For hotter sauce, add 2 tablespoons red chilies and 2 chopped jalapeno chilies.

1/2 tsp. salt

1 onion, chopped
2/3 c. catsup
3 tbsp. Worcestershire sauce
Mix together in saucepan; vinegar, sugar, mustard, pepper, salt, chili powder and lemon juice. Begin to simmer fry onion in butter until tender then add to sauce and let simmer 20 minutes. Add catsup and Worcestershire and simmer 5 more minutes. Stores well for several weeks in refrigerator.

SPICY BBQ SAUCE
2 med. onion, finely chopped
Oil to saute onion
2 c. catsup
2/3 c. Worcestershire sauce
2 tsp. salt
1 tbsp. chili powder
2 tbsp. lemon juice
1 c. water
4 or more hefty dashes Tabasco sauce
Saute the onion in a little oil until limp. Stir in remaining ingredients. Simmer until the flavors blend nicely and the sauce becomes thick enough to stick on ribs. Makes 1 quart.

SPICY BBQ SAUCE
3 lb. round steak, 2 inches thick
1 c. ketchup
1/2 c. water
1/4 c. soy sauce
2 tbsp. vinegar
1 tbsp. brown sugar
1 tsp. mustard
1 tsp. horseradish
1 clove garlic
Combine the last 8 ingredients in saucepan. Simmer 10-15 minutes.
Prepare steak: moisten steak with water. Sprinkle with meat tenderizer 1 1/2 teaspoons). Pierce with fork several times, both sides. Tenderize overnight or several hours before. Heat up grill. Throw on steak and baste with BBQ sauce several times until steak is done.
Try this:
1 1/2 cups water
4 tbsp sugar
4 tbsp apple cider vinegar
11/2 tbsp freshly ground Thai chilies
1 tbsp light soya suace
1 tbsp worcestershire sauce
1/2 tsp A1 sauce
1 tbsp tomato sauce
1 star anise
Thickening:
1 tbsp cornflour
2 tbsp water
Method:
Over slow heat/flame cook gravy until it thickens slightly, then further thicken with cornflour solution if you need it only.
Enjoy, go easy on the Thai chillies as they get a little spicy so maybe if you tried a tbsp first then add more if you can handle it.
Here's a dry rub one. One tablespoon paprika, Two teaspoons chili powder, 3/4 teaspoon salt, 1/4 teaspoon dry mustard, 1/4 teaspoon garlic powder, and 1/8 teaspoon pepper. Mix all ingredients and store in salt shaker. Sprinkle on both sides of meat and grill. Yields enough for 3 1/2 pounds of ribs.
