How to cook hominy?!

How to cook hominy?

Can the hominy used in menudo/pozole be cooked and eaten on it's own? If so, what ways should I cook it?


Answers:
I like the yellow hominy heated with butter and salt and pepper. I have also had it heated and drained and added to the top of a green salad with bacon bits,onion and haved cherry tomatoes.

stir some onions in a pan then add hominy and hot stock, put the lid on and simmer 30 mins stirring occcaisionly. season and add 2 sticks of butter, take off the heat and let stand 5mins. good with fried tomatoes and sausage

Basically the same way you do corn, just cook it a bit longer. Hominy is alot tougher.

I don't know about eating it alone. I ripped this recipe out of a magazine in the doctors waiting room last week. I don't remember what magazine it was. It sounds like it needs some lime squeezed in it too......

Green Hominy & Pork
1 chopped onion
3 tsp chopped garlic
2 chopped serranos
1 can chicken broth
1lb ground pork
1tsp each of cumin, coriander, salt
1 14oz can hominy/pozole drained
1 cup chopped cilantro
pepitos (shelled pumpkin seeds)

Puree the onion, serranos, garlic & broth in a blender.
Brown ground pork breaking it into very small pieces.
Drain fat off pork, add pureed mixture and simmer 10min.
Add hominy, cilantro, spices and simmer 10 mins more.
Serve in bowls sprinkled with pepitos.
