Around 150 degrees F. Rare is 145.

well we've covered 130o to 160o for one temperature. Don't trust these chef's is my advice. My instant read thermometer says 160o for medium, 130o is raw.

For bigger cuts like roasts you take it off the fire 10o less as it keeps cooking when it has some mass.

It depends where in the world you are. East and West coast of the USA has a more rare state for medium. In the Midwest there will be no pink on the inside of the steak. That will make it about 140-145* F. On the coast it would be what the Midwest would call Medium rare. A warm pink center. That would be about 135-140* F.
