Question:

Does anyone know a good pickling vinegar for chillies?

I have about 2 Kilos of fresh chillies which have been home grown, Thanks in advance guys

Answers:
Applecider vinegar is the best!!

White, or distilled, vinegar imparts less "foreign" flavor to the chilies than will cider vinegar. My friends from India pickle chilies using only salt and mustard oil. This combination makes great chili pickle and, WOW, is it ever hot. Good stuff.

I used a combination of red wine and sherry vinegar last year for red chilis, they taste fantastic! They've got a mellowness then a real bite at the end - yummy!!!
