Answers:
Ripe Tomato Relish
Wash, peel and chop 3 quarts tomatoes.
3 cups celery, chopped
3 cups onions, chopped
1 cup green pepper, chopped
1/4 cup salt
Let stand overnight. Drain. Mix into large pan and bring to a boil the following ingredients:
2 cups sugar
1/4 cup brown sugar
1 cup vinegar
1 1/4 tsp. black pepper
1 1/2 tsp. pickling spice
Add vegetables and simmer 15 minutes. Very good served on hot dogs or fried potatoes. The tomato relish can also be canned.
AND
Easy Tomato Chutney
10 big fully ripe red juicy tomatoes
2 big onions, chopped
5 dried garlic, peeled
2 teaspoons sugar
Salt
1 teaspoon black pepper
2 bay leaves
4 cloves
1 inch cinnamon
1 pinch nutmeg
1 tablespoon oil
Take a non stick heavy bottom pan and heat the oil.
Put bay leaves, cloves, cinnamon first and then add onion, garlic, salt and black pepper powder.
Sauté for 2 minutes and add chopped tomatoes, salt and sugar.
Keep covered and stirring for 10 minutes or until tomatoes are soft.
Allow to cool to the room temperature.
Add nutmeg now. Remove the bay leaf before blending; stray bay leaves can really mess up a recipe!
Put the mixture in the blender and blend till smooth (Remove bay leaves before blending).
Fill in a sterilized jar and keep refrigerated.

diced your tomatoes, along with some diced white onions. sautee in some evoo & butter, after a few minutes 10-15,add some honey and salt (kosher). and add a little tobbasco to it. make sure you cook it over medium heat, and stir so that it doesn't burn.
Cut tomatoes into small pieces and fry them in little oil till it gets tender and set aside. Now put all the fried ingredients in a mixer jar and grind them adding little little fried tomatoes. Add salt and cilantro..It tasts yummy.......go ahead,,
