Chicken Couscous with Sun Dried Tomatoes:

3 servings
3 boneless skinless chicken breasts, cubed
1/2 lb fresh mushrooms, quartered
1 small yellow onion, coursely chopped
5 cloves fresh garlic, minced
1/4 cup sun-dried tomatoes (in oil)
2 tablespoons olive oil
2 tablespoons fresh sage, minced
1 1/2 cups water (or broth, or water/white wine mix)
2 tablespoons butter
1 cup couscous, uncooked
1. Cook chicken, mushrooms, onion, garlic, sage in oil over medium heat.
2. Add tomatoes to chicken mix.
3. set aside.
4. Boil water, add butter, and remove from heat.
5. Add couscous.
6. Add couscous to chicken mix and mix well or serve chicken mix over a bed of couscous.

In loads of things. You can soak them for 30 minutes in boiling water before using them to soften them up if they are bought completely dry.
They are nice on pizza, in pasta dishes, salads.
Realy good in a light summer salad to ad a bit of bite, but great turned into a spicy chutney to slap on yer burger or with a nice piece of mature cheese.

Wonderful in pasta dishes,homemade pizza's ect. Eat on cracker biscuit's with cheese or avacado,olives ect. Even in salad's...cos lettuce,sun dried toms,parm cheese and dressing. My kid's love them as afternoon snacks.
If they are dried soak them in hot water to re-hydrate them and then use them in salads. Otherwise you can dice them up fine, dried to put in something like rissoto or cous cous or something. They are really tasty as they are and give a different texture. (Do not give to your granny if she has bad teeth! Or, if making a casserole you could put them in the casserole and cook as normal. The fluid from the casserole and the long heat will rehydrate them.
Oiled tomatoes can be used in salads - reserve a little of the oil for a really tomato flavoured lemon and oil vinegraitte. Lots of things you can do but these are a few suggestions.
Eat them! Soak them in water til they are soft, you can then take them and make a tasty marinara sauce in a food processor. Keep it cold and get a zucchini spiral gadget and you will have a yummy & nutritious alternative to spaghetti!
