Curry sauce ideas?
I know how to make a tomato based curry using curry paste, tinned tomatoes etc.
But how do I make a simple curry sauce that I might have on fries or rice. Like, take-away style.
Or perhaps add vegetables to.

Ingredients & Instructions
Saute slowly until tender:
1/4 cup chopped onion
1/4 cup chopped tart apple
in:
1/4 cup butter
Stir in and cook, without browning, for 4 or 5 minutes:
2-1/2 tablespoons flour
1/2 to 2 teaspoons curry powder
Add slowly, stirring constantly and simmer until well blended:
1 cup chicken broth
1 cup cream
1/2 teaspoon grated lemon peel
If you wish to have a perfectly smooth sauce, add the chicken broth and grated lemon peel only, cook for 10 minutes, strain through a sieve, add the cream and bring back to a boil. You may liven up this sauce if you like a hot curry, with dashes of: hot pepper sauce, cayenne, ginger, chopped chutney, and/or dry sherry.

Curry Roux Recipe
INGREDIENTS:
1 tbsp curry powder
2 onion
2 tbsps flour
3 cups water
2 cubes soup bouillon
1 tsp grated fresh ginger
1 tsp grated garlic
1/2 tsp garam masala
2 tbsps butter
PREPARATION:
Heat water in a pan and add soup bouillon to make soup. Slice onion thinly. Heat butter in a pan and saute onion slices slowly until they are brown for 15-20 minutes. Add garlic and ginger in the pan and saute well. Add flour and curry powder and saute over low heat. Pour soup in the pan little by little, stirring quickly. Simmer the curry roux until thickened, and add garam masala at last.
This is a great curry to make, it has chicken in it, but you can add any vegetables that you like. It's very easy to make and tastes great! It's mild, not too spicy!
INGREDIENTS
1 (3 pound) whole chicken, skin removed and cut into pieces (I usually use about 4 or 5 Chicken breast.
3 onions, chopped
1 teaspoon ground cinnamon
1 bay leaf
2 cloves crushed garlic
1/4 teaspoon ground ginger
1 teaspoon paprika
3 tablespoons curry powder
1/2 teaspoon white sugar
1/2 lemon, juiced
1/2 teaspoon cayenne pepper
1 tablespoon tomato paste
1 pinch salt
1/4 cup olive oil
water to cover
DIRECTIONS
Fry the onions in olive oil until browned. Add the cinnamon and the bay leaf. Continue stirring and add the ginger, paprika, curry powder, sugar, salt, and garlic. Continue stirring for 2 minutes. Mixture will become much like a paste.
Add chicken pieces and tomato. Add enough water to just cover the chicken. Simmer until chicken is done, about 20 minutes.
Just before serving, add the lemon juice and the cayenne pepper. Simmer for 5 more minutes.
I would make this the day before, as leaving it over night lets the flavors blend more! It's good as is, but you can always add mushrooms, peppers, carrots, potatoes to it...however you like it! It can also be frozen!

I believe you can saute up some onions diced small.Add sour cream and curry powder.I believe this is how Mom used to make shrimp curry.Oh and maybe cream of shrimp soup?
