Where are you from? I never heard of using potato salad in a sandwich. Is there anything special you do to make it "sandwich material"?

I guess I would serve something like this with sweet Gherkin pickles or marinated, pitted Greek olives.

Cranberry sauce or sugar-free strawberry preserves. The red color will go nicely.

I've never heard of potato salad being made into a sandwich but I would guess mayo and/or pickle relish would be good.

Dill and a tomato or fruit based chutney. If you are craving potato salad sandwiches add anything mate...you'll be right.

Cayene pepper works for me. Also garnish with bell pepper, maybe paprika, if not already used.

I'm a simple girl, so I'd just give it a squirt of tomato sauce!

When I make mine, I usually crush some potato chips on top before putting on the top slice of bread. The crunchy/salty thing is delish.
