The very best!!!
Pancake mix
Dry mix
6 cups all-purpose flour
1 1/2 teaspoons baking soda
3 teaspoons baking powder
1 tablespoon kosher salt
2 tablespoons sugar
Combine all ingredients in a lidded container. Shake to mix.
Use the mix within 3 months
INSTANT PANCAKES
2 eggs separated
2 cups buttermilk
4 tablespoons melted butter
2 cups dry pancake mix
butter for greasing pan
Whisk together the egg whites and the buttermilk in a small bowl. In another bowl whisk the egg yolks with the melted butter
Combine the buttermilk mixture with the egg yolk mixture in a large mixing bowl and whisk together. Pour the liquid ingredients on top of the dry mix. Using a whisk, mix the batter just enough to bring together. Don't try and get the lumps out.
Lightly butter a hot griddle or pan, and grill away.
It's actually pretty simple! Do you have a cookbook? Well basically to make pancakes, non-buttermilk kind a recipe is:
Plain Griddle Cakes (pancakes from scratch)
sift:
one cup flour
2 teaspoons baking powder
one-quarter teaspoon salt (not needed)
beat and add:
one egg (optional)
add:
1 cup milk (scant)
stir gradually to make smooth
add:
1 teaspoon melted butter or oil
cook in a hot frying pan, flip pancakes when they bubble, to brown the other side.
Serve with Vermont maple syrup.
I hope it works out for you! It sure is easier than you may think
Happy eating :-D
* 2 cups all-purpose flour, stirred or sifted before measuring
* 2 1/2 teaspoons baking powder
* 1/2 teaspoon salt
* 1 egg, slightly beaten
* 1 1/2 cups milk
* 2 tablespoons melted butter
cook on a 300 degree griddle (or on a skillet on the setting right between Med. High and High)
spary pan w/ cooking spray or coat LIGHTLY with butter/margerine
use about a 1/4 cup of batter for each pancake. when the top of the pancake looks like it has alot of pockets (from air bubbles bursting), and the edges are golden brown, its time to flip. cook for another minute - 2 1/2 minutes.
mmm i think im having pancakes for breakfast!!!
I went to an early morning pasta making class and the chef had prepared these pancakes for us to eat prior to the start of class. He kindly shared his recipe. They are the fluffiest pancakes I have ever made.
Pancakes
2 eggs, separated
1 cup milk
5 tablespoons unsalted butter, melted
1 1/4 cups flour
4 teaspoons baking powder
3/4 teaspoon salt
1 tablespoon sugar
Whisk dry ingredients together; flour, baking powder, salt, sugar. Whisk egg whites and milk together. Temper* egg yolks with some of the melted butter then whisk the tempered egg yolks into the rest of the melted butter. Whisk the egg yolk butter mixture into the milk mixture.
(*When eggs or egg yolks are added to a hot mixture all at once, they may begin to coagulate too rapidly and form lumps. So, stir a small amount of the hot mixture into the yolks to warm them and then stir the warmed egg yolk mixture into the remaining hot mixture. This is called tempering.)
Whisk wet ingredients into dry ingredients, batter will have some lumps. Drop by 2 ounce ladelfulls onto a heated oiled non-stick griddle. When pancake bottoms are browned and the top surface starts to bubble flip cakes and cook until remaining side is browned. Makes about 12 pancakes.
