Answers:
My favorite is a spinach/artichoke casserole. There is no way to make this a pretty presentation though. I've tried to dress it up with variations, and it still comes out flat ugly. But oh soooooo good!

8 oz. frozen artichoke hearts/quarters (Do not use canned. They usually have some sort of brine, and seem mushy to me.) Bird's Eye has frozen ones that come in a box, and Kroger/King Soopers carries a larger bag under their house label "Private Selection."

8 oz. frozen CHOPPED spinach
1 stick Cracker Barrel sharp cheddar cheese, cut into small cubes. Do not use shredded cheese.
1 packet dried onion soup mix
16 oz. sour cream. I use lowfat, it doesn't seem to affect taste or texture.

Cook artichokes and spinach on stovetop, according to directions. Drain artichokes, and press spinach in colander until excess moisture is drained off.

Mix all ingredients in a 2 qt. casserole sprayed lightly with Pam or similar product. Bake at 325 for 40 minutes.

hey.. never really try to cook this myself! But once tried something real nice in a pizza place.
