My Best way to do ribs (Beef Preferably) the night before you are having your cook-out get your ribs and boil them in the biggest pot you have for about one to one and a half hours (*also make sure you add 1/4 of onion and half a bell of garlic to get rid of the RAW Meat taste and smell* only when boiling)(you might have to cut your slab of ribs in order to fit them in the pot). That gets the meat tender and soft (and easily comes off of the bone when you eat it). After you boil the ribs and you take them out of the pot let them sit in Large broil pan or foil paper for about 15 min. that allows them to cool off. The boiling process also allows the fat to get soft and you want to cut off the unnecessary fat from the ribs. Once you cut of the fat marinate heavily with BBQ Sauce (both sides).
store them in the fridge over night, i like to put orange slices on top of the ribs before i put them in the fridge. NEXT DAY> cook in the barbecuer turning them around frequently...each time you turn them around marinate some more, that will give you a nice BBQ Candy coating on the rib and the meat should almost perfectly slide off of the bone...Good Luck & Good Eating. The simplest is to marinate the chicken, put the pieces in a large sealable plastic bag, add vegetable oil and Lowery's Seasoning salt. Seal the bag, refrigerate until ready to cook.
For Ribs, I prefer a dry rub and it can be done right before cooking.

Try not to use any salt in your dry rub as salt will draw the moisture out of your chicken before you cook it! Don't want dry chicken do ya? Check pre made seasoning mixes for salt content. If you see salt as an ingredient - don't use it. Try freshly roasted and ground spices instead. My personal favorites are thyme and sage. If you prefer a liquid marinade, try plain old Italian Salad Dressing. I know it contains a small amount of salt but the oil seems to counteract the salt effect!
If you are cooking ribs, just remember to keep them off of direct flame and cook as long as possible. 3-4 hours is best over very low heat. I cook mine on a smoker but if you don't have one you can still use a regular grill. Just build your fire on one side and slap the ribs on the other side. Throw a handful of wet wood chips (you can usually buy these wherever you buy your charcoal) on the fire every so often to create smoke and leave your ribs alone. Don't turn em or move em. The low heat and smoke will circulate around them (don't forget to close the lid) and will cook them evenly. Sauce at the end is up to personal preference. We have won many BBQ cookoffs using this method and I think you will be happy with the results. Happy BBQing!
