CHICKEN TACOS

2 med. onions, chopped
2 tbsp. oil
16 oz. can whole tomatoes
8 oz. can tomato sauce
1 clove garlic, crushed
4 c. chopped chicken
1 1/2 tsp. salt (optional)
1 tbsp. chili powder
1/4 tsp. pepper
12 warm flour tacos

EXTRAS:

Chopped olives
Cheese, grated
Sour cream
Lettuce

Saute onions in oil; add tomatoes, sauce, spices and chicken. Simmer 60 minutes on low. Spoon mixture into a warm flour taco. Add toppings and enjoy.

Marinate chicken in Chili poweder and apple cider vinager. Broil chicken till done, Take pico and add cumin and chili powder with garlic and mix, serve warm with flour tortillias and fresh cilantro

NO cheese needed

ingredients:
4 flour tortillas
1 cup canned refried beans, warmed
2 cups shredded cooked chicken meat
2 tablespoons sour cream
1 avocado, peeled and sliced
2 large tomatoes, sliced
2 small bunches watercress, trimmed, washed and dried
2 tablespoons freshly squeezed lime juice
2 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper

directions:
Spread the tortillas on a counter. Spread each with a strip of warm refried beans down the center. Top with the chicken (warmed), sour cream, avocado and tomatoes. Lightly toss the watercress with the lime juice, olive oil, salt, and pepper and place over each burrito. Fold the bottom quarter of each tortilla up and then roll from the side into a cylinder.

Take boneless, skinless chicken breasts and put in a casserole dish. Cover with your favorite jarred salsa and top with cheese. Cover entire dish tightly with aluminum foil and bake at 350 for about an hour. Shred with a fork and serve with soft flour tortillas, extra cheese, tomato, lettuce, salsa and guacamole!

Easy and tasty!

Mix cooked lean ground beef (or substitute with shredded cooked chicken or strips)with 2 cans of chili w/out beans and 2 cans of cheddar (or nacho cheese soup). Fill flour tortillas with the mixture, roll and place in baking dish top with remaining meat mixture and shredded cheddar or Mexican blend cheese. Bake at 350 until heated and cheese has melted. Serve with shredded lettuce, tomatoes and sour cream.
