How do you make cheese and onion pasties?

From scratch? anyone know?

Ingredients:
900g/2lb shortcrust pastry
2 tbsp vegetable oil
450g/1lb onions, peeled and sliced
450g/1lb mature cheddar, cut into 1cm cubes
1 tsp paprika
salt and pepper
1 egg, beaten, for glazing


Method
1. Preheat the oven to 200C/400F/Gas 6.
2. Roll out the pastry and cut out 6 circles 20cm/8in in diameter.
3. Heat the oil and cook the onions in it until starting to soften. Take off the heat and cool.
4. Stir in the cheese cubes and paprika and season well. Divide the mixture between the six circles and crimp the edges together.
5. Brush with a little of the beaten egg. Put on a baking sheet and bake in the oven for 20-30 minutes until the pastry is golden. Serve hot or cold.

puff pastry (I use frozen, but homemade is fine if you are a purist)
1/2 ounce unsalted butter
2 medium onions, finely chopped
1/2 lb double Gloucester cheese or cheddar cheese, grated
4 tablespoons fresh parsley, chopped




1. Thaw the pastry.
2. If using homemade, put your dough in the refrigerator to chill.
3. Preheat oven to 400°F.
4. Melt the butter in a frying pan on a low heat.
5. Mix in the onions and cook them until they are just beginning to soften.
6. Mix them with the cheese and parsley.
7. Roll out the pastry and cut out 4 rounds, each about 6 inches in diameter.
8. Put a quarter of the cheese mixture on one half of each one.
9. Fold over the other side and crimp the edges together.
10. Lay the pasties on a floured baking sheet and brush them with milk or beaten egg.
11. Bake them for 30 minutes and serve hot.

CHEESE AND ONION PASTIES

2 c. shredded Cheddar cheese
3 1/4 c. sliced green onions
3 cans Pillsbury Refrigerated Quick Crescent Dinner Rolls
3 tsp. oil
1/4 tsp. dried dill weed

Heat oven at 375 degrees. In small bowl, combine cheese and onions.

Separate dough into 16 triangles; cut each in half diagonally to make 32 triangles. Place rounded teaspoonful cheese mixture on the center of each triangle. Bring corners to center over filling, overlapping ends; press gently to seal.

Place on ungreased cookie sheets. Brush each lightly with oil, sprinkle with dill weed. Bake at 375 degrees for 10-13 minutes or until golden brown. Serve warm.

Buy a packet of ready mixed pastry and follow the instructions to make it up, on a floured surface roll out a knob of the pastry and look at it, amazed it has become both flat and round, pilev a mix of grated cheese and finely sliced onion onto this round of pastry and after wetting the edges fold over to form a half circle . Press around the edges with a fork if you want it fancy, your thumb if plain, cut a small hole in the top to allow steam to escape and shove it into the oven for as long as it takes to make the pastry stiff and the cheese runny. Allow to cool before eating the first one as a badly scalded pair of lips wil be no use to you this weekend.
