Of all the veggies, this is my favourite. Here is the simplest and quickest recipe I know.
Due to their delicate flavour, avoid boiling them as most of their flavour gets lost in the water this way. Better to steam them till 'al dente'. When done, in a wide pan melt a good sized knob of butter, add sea salt and ground black pepper, then add the steamed asparagus and toss continuously over a lively flame till the butter turns 'brown and nutty' (not burnt...). Remove and immediately cover with finely grated parmesan cheese. Serve while the parmesan begins to melt.

Blanch the asparagus for 1-1/2 minutes in boiling water - drain, place on shallow dish cover with Italian Dressing, stir and chill for 1 hour, serve.

Blanch the asparagus for 1-1/2 minutes in boiling water - drain, cool in ice water bath, place onshallow dish cover with Balsamic Vinegar, and serve.

Saute' until tender with lemon juice, garlic and butter. Very delicious.

Rinse, break off tough ends, steam until tender, lots of butter, salt to taste. What could be better?

Roast them! Break off ends, drizzle with Extra virgin Olive oil, sprinkle with Kosher salt and pepper and roast for about 20 mins at 425. It is the only way I cook aparaugs my family loves it.

easy to stir fry...cut bite size...(after you take off the hard end.. or use a potatoe peeler & you can eat that hard end ..) heat a heavy pan w/some peanut oil very hot... toss in the asparagus & add a little sesamie oil , soy , garlic & pepper...cook to desired tenderness.. takes about 5 mins or so....

Wash and break off ends...................take a slice of bacon uncooked around each spear and cook in the oven on 400 until bacon is crispy. Delicious!

blanche for 1.5 minutes, drain and put in an ice water bath. heat olive oil saute as much garlic as you want add asparagus saute quickly sprinkle with kosher salt.

gently fry in a small amount of oif bite size pieces of asparagus with chopped garlic and chalots when tender add beaten eggs and salt and pepper to taste cook until the eggs are cooked and serve hot with a drizzle of olive oil and balsamic vinegar
