i have alot of stuff to make a cheesecake and i dont know a good recipe and i just want it plain no strawberries or anything.

Cheesecake (plain)
Crust:
1-1/2 cups graham cracker crumbs (I use one wrapped package, its a little over 1-1/2 c.)
1/3 c. white sugar
1/3 c. melted butter/margarine

Combine all 3 ingredients and press into a deep pie plate or springform pan, push up the sides of the pan. All the way on a pie plate or 1/2 way on a springform pan.

Filling:
3 - 8 oz. pkgs. cream cheese softened
1 - 14 oz. can sweetened condensed milk
3 eggs
2 teaspoons vanilla extract
1/2 cup sour cream

Beat cream cheese until smooth, will resemble frosting. Make sure cream cheese is room temperature. Gradually add sweetened condensed milk, beat well. Add eggs one at a time, beat well between additions. Add vanilla and sour cream, beat well. Pour batter into prepared crust. Bake in the oven at 300 degrees for 1 hour. Do not open the oven door!!! Allow to cool in oven for 1 hour. Remove from oven and cool completely. Refrigerate. If using a springform pan, do NOT remove sides of pan until you have refrigerated for at least another hour. Refrigerate for at least 3 hours or overnight. Serve.

You can add mini chocolate chips - 1/2 cup mini chips tossed in flour, mix into mixture before pouring filling into crust. Use another 1/2 cup of mini chips and sprinkle them on top.
You can make a chocolate "cookie" crust by adding 1/3 cup unsweetened cocoa powder to your crust recipe.
For strawberry cheesecake you can make a strawberry filling by putting 1/2 cup strawberries in a food processor. After pouring filling into crust drizzle the strawberries onto the top and swirl by cutting a knife into the filling. After cooling completely top with fresh strawberries.

The best thing to do id go to America's Test Kitchen. com the have just about the best recipe for anything, and the cheesecake is superb!! i have tried it, with and wihtout the suggested strawberry topping...

PLAIN CHEESECAKE

3 (8 oz.) pkg. Philadelphia cream cheese
1 c. sugar
4 eggs
1 tsp. vanilla
2 tbsp. cornstarch
1 (12 oz.) sour cream
4 tsp. sugar
10-inch springform pan, sprayed with Pam
Graham cracker crust

Prepare springform pan, spraying sides and bottom. Press graham cracker crust on bottom and sides (just a little on sides). Beat first 5 ingredients until smooth. Pour into crust, it will go over side crust. Bake 40 minutes at 350 degrees.
Stir together sour cream and 4 tablespoons sugar, set aside. After 40 minutes, open oven and pour and spread carefully sour cream mixture over top. It will be soft, so be careful. Return to oven 10 minutes. Then turn off oven, open door and leave in 15 minutes. Cool on rack and refrigerate as is for 6 hours. Then remove ring and top with favorite topping. Enjoy!

EASY-TO-MAKE CHEESECAKE - CHOCOLATE
CHIP OR PLAIN

1 1/2 c. finely crushed Oreo cookies (or graham crackers)
1/4 c. melted butter
3 (8 oz.) pkgs. cream cheese
1 (14 oz.) can sweetened condensed milk (Eagle)
3 eggs
2 tsp. vanilla
1 tsp. flour
1 c. mini chocolate chips

Preheat oven to 300 degrees. Mix butter and cookies together and press into 9 1/2 inch pan (wax lined springform). Beat cream cheese until fluffy. Add condensed milk. Beat until smooth. Add eggs and vanilla. Mix well.
Toss 1/2 cup chips with flour and fold into cheese cake mixture. Pour into prepared pan. Top with remaining chips. Bake 1 hour or until done. Lightly browned, springy top. Cool then chill.
