This is the one i make a lot.

ingredients

6 roma (plum) tomatoes, diced
1 sweet onion, diced
1 jalapeno pepper, seeded and finely chopped
1 medium red bell pepper, diced
1 medium yellow bell pepper, diced
1 bunch cilantro, finely minced
1 lime, juiced
1 teaspoon salt, or to taste

directions
In a bowl, mix the tomatoes, onion, jalapeno pepper, red bell pepper, yellow bell pepper, cilantro, lime juice, and salt. Cover and refrigerate until ready to serve.


or i make this green avocado salsa

ingredients

1/3 cup water
1/4 teaspoon black pepper
3/4 cup chopped onion
3 cloves garlic, minced
4 medium fresh jalapeno peppers, seeded, deveined, and finely minced
1 cup chopped fresh cilantro
1 avocado, peeled and pitted
1/2 pound tomatillos, husked and chopped

directions
Place the water, pepper, onion, garlic, jalapenos, cilantro, avocado, and tomatillos in a blender, or the bowl of a food processor. Puree or process to desired consistency, adding more water as needed. Serve immediately.

I'm from Texas and this is the recipe that I use...ENJOY!!!

Salsa Fresca

Ingredients:
4 medium ripe tomatoes, cored, seeded, finely diced
1/4 white onion, minced
2 jalapeno chiles, stemmed, seeded if desired, minced
1 bunch cilantro, leaves only chopped
2 tablespoons lime juice
3/4 teaspoon salt

*I also put in 1 tsp. of minced garlic (NOT IN THE ORIGINAL RECIPE)

Pinch of freshly ground black pepper

Preparation:
In a mixing bowl combine all the ingredients. Stir and toss well. Serve. Store in a covered container in the refrigerator no more than 1 day.

Servings: 6

Pico de Gallo

1 ripe tomato (3 Romas are best) diced
1/4 onion Videllia or yellow diced
1 clove of garlic minced
1/4 cup cilantro chopped
1 serrano pepper veined, seeded, and minced
1 tbsp. olive oil
salt and pepper to taste

This is just about as authentic as you can get. I lived in Mexico for 20 years, and brought this and a ton of recipes with me.

There are others, but to me this is the best of the best.

Chop up an onion
Chop up a tomato
Chop up a couple of cloves of garlic
Chop up a couple (more or less to taste) of Jalapeno peppers
Chop up some cilantro

Heat some olive oil in a skillet, add the onions & saute until soft.
Add the garlic and tomatoes and jalapenos
continue sauteeing until all are soft
add the cilantro.
salt & pepper to taste.
enjoy hot or cold
make more if you want
you can add chopped up mango when you add the tomatoes...that's really yummy.
the heat of the jalapenos is in the seeds and the white veins in the inside. the flavor is in the green pod.

If you don't cook it it's called "pico de gallo" and is good just as it is.
