Here is a recipe you might like to try:

FISH CAKES

2 c. canned salmon, tuna or mackerel
1 c. cold mashed potatoes
1/2 c. minced onion
2 tsp. lemon juice
2 eggs (beaten)
1/2 tsp. salt
1/2 tsp. pepper
1/2 c. all purpose flour
1/2 c. oil
Cocktail sauce (optional)

Combine first 7 ingredients, mix well. Shape into 8 patties. Dredge in flour, fry fish cakes in hot oil about 10 minutes or until brown, turn once. Drain well.

It's fully cooked, right? I've never had it but if it's fully cooked I'm thinking you can use it any way you might use Tuna. Mix it in with a Tuna Helper meal, Tuna Noodle Casserole, or mix with mayo and serve on a sandwich.

We used to eat this allthe time when we couldnt afford Salmon................mix one can with salt, pepper, chopped onion, one egg and 1/2 cup bread or cracker crumbs. Form into patties and fry in 1/4 of oil. MAkes delicious croquettes!

Mackerel Cakes!

Open and drain the mackerel. Pick through the mackerel, removing anything that appears to be bone (hard bits) or skin (dark, fatty stuff). Dispose of the bone and skin. Place the mackerel in a mixing bowl. Add 1 beaten egg and 5 or six finely crushed saltines, 1/2 tsp Old Bay seasoning and a tsp of minced fresh parsley. Stir all together with a fork, breaking up the chunky bits of mackerel. If the mixture seems wet, add a few more crushed saltines. Take 1/2 cup of this mixture into your hands and shape it into a rounded patty about 3/4" thick. Do this until all of the mixture is made into patties.

Perpare a hot frying pan with about 3 Tbs vegetable oil. When the oil is hot, drop in the patties. Allow them to fry to a golden brown, then flip over and brown the other side. The cooked patties can then be drained on paper towels. I like these with macaroni and cheese and steamed green beans. Yum!
