Deviled Eggs with Bacon

6 large eggs, hard boiled
1 tablespoon mayonnaise or more if needed
1/2 teaspoon white vinegar
1 teaspoon prepared horseradish
1/2 teaspoon dry mustard
dash of Tabasco
salt and pepper to taste
4 slices bacon, cut into small pieces and cooked crisp
fresh parsley for garnish

Halve the eggs and carefully scoop out the yolks and put them into a mixing bowl. Add mayonnaise, vinegar, horseradish, mustard and Tabasco and blend well. Season to taste and place the eggs on a decorative dish. Can be made to this point a day ahead and stored in the refrigerator covered with plastic wrap. Sprinkle with bacon bits and chopped parsley before serving. Makes 12 halves.


Deviled Eggs with Pimentos and Parsley

5 hard cooked eggs, peeled and halved lengthwise
salt and pepper to taste
1 1/2 tablespoons drained chopped pimentos
1/4 teaspoon onion powder
2 teaspoons finely chopped fresh parsley, plus a little more for garnish
1/2 teaspoon Dijon mustard
2 tablespoons mayonnaise

Remove egg yolks from white and place in small bowl. Mash with back of fork. Add the remaining ingredients and stir until well combined. Taste for seasoning. Fill egg whites with yolk mixture using a spoon or piping bag. Garnish each with chopped parsley. Makes 10.



Boil half a dozen eggs until hard. Remove shells, cut in halves, mash
the yolks to a smooth paste with about 1/2 teaspoon mixed mustard, 1
teaspoon softened butter, pepper and salt to taste. Some like a small
quantity of cold boiled minced ham added. When ingredients are well
mixed, press enough of this mixture into the cup-shaped whites of eggs
to form a rounding top. Serve on a platter of parsley. To boil eggs
uniformly, they should be placed in a wire basket and plunged into
boiling water and boiled not longer than 15 to 20 minutes from time
water commences to boil, then pour cold water over and shell them



INGREDIENTS

1 pinch Paprika
DIRECTIONS
Slice eggs in half lengthwise; remove yolks and set whites aside. In a small bowl, mash yolks with a fork. Add the mayonnaise, sugar, vinegar, mustard and salt; mix well. Stuff or pipe into egg whites. Sprinkle with paprika. Refrigerate until serving.

i just use miracle whip ,and sweet pickle relish makes the best i have ever had,you can add some re hyderated onion if you like but not nessesary bit of salt just add enough miracle whip to make a soft paste of the egg yolks then add in just the relish not the juice so for six eggs add about 1 tlb of each and add as needed

Well, my favorite deviled eggs are just the mashed yolks, some mayo, and a little yellow mustard mixed together, then topped with a dash of paprika. It's an imprecise recipe... kind of to your own taste kind of thing. :)

Also, epicurious.com has a lot of more exotic deviled egg recipes. Just type "deviled eggs" into the search box on their homepage.

I mash the yolks with a little sweet pickle juice first, then add mayo, a little prepared horseradish, and a little dijon mustard, salt and pepper to taste. Add the mayo gradually to get the consistency you desire. The horseradish is subtle, and gives it a little zing. You can pipe the filling into the whites with a pastry bag, or just use a teaspoon. Top with a dash of paprika, or small sprigs of parsely. They disappear immediately whenever I make them!

The old southern version is my favorite.
One tblsp of mayo
1/2 tsp of mustard
1/2 tsp of sweet pickle juice
all of the above is per egg
sprinkle tops with paprika

6 Large hard boiled eggs cut in half and yolks removed

With the yokes mash with
3 tablespoons Sour cream (light works well too)
1 teaspoon mustard
1 teaspoon deijon mustard
finely chopped parsley for color and flavor

fill sandwich bag with yolk mixture and "pipe" into egg whites (if you have a pastry bag by all means use it!)

Garnish with a little more parsley and some paprika

This is my own recipie, I use the sour cream because it's not only a little bit better health wise, but it makes the eggs so much creamer and you also don't have to add extra sugar
I also use dejion mustard instead of white vineager because it adds more depth to the taste!

try a little horseradish with mayo and mustard adds a little zing! i like to put halve of a green olive on top
