Need to cook for 6 ppl, Need easy tasty recipe. Help!?

My husband and his brother, sister in law, father and mother are going to the beach. I was volunteered to cook one night. I am not creative. I don't want to bring a cookbook and hope I can decide on something that I have never tried myself. Need something simple, fairly inexpensive and really tasty (with safe ingredients, nothing too out there). All recipes are appreciated!


Answers:
You could make tuna cakes... or salmon cakes.
And to save yourself some time... you could bake them in the oven. I put them in muffin pans and they come out the same size and perfect.
I never use an exact recipe for tuna/salmon cakes... I just throw in anything we have in the kitchen. Potato, corn, parsley, ...
And we usually eat it with a salad.

Also you could make Russian salad. We make sandwiches with it when we go to the beach.
1-2 chicken breast/thigh (boiled or baked, shredded)
4-6 hard boiled eggs (shredded or cubed)
2-3 big potatoes (boiled, mashed)
1-2 sticks of carrot (shredded)
half a jar of pickles (shredded or cubed)
half a cup of mayo (its up to you if you wanna put more)
lemon juice, olive oil, salt, and pepper (to your taste)

Mix them all together... store it in the fridge for a couple of hours so all the taste would come together. It goes great with some baguette, slices of tomato, lettuce, and coke.

Also you could make chicken kiev... I think that is what they call it.
Thinly sliced or cubed mushrooms... ricotta cheese... mozzarella (I use just a bit)... parsley... salt and pepper... be sure to put enough salt... ricotta cheese doesn't have any.
I roll it up and put it in the fridge or freezer so it would harden up.
I beat the hell out of chicken breast (sorry... I don't know the "technical term" :D) until its really nice and thin. A bit of salt and pepper. I put the rolled cheese in it... roll up the chicken... fasten it with toothpick. Then I melt some butter... add bread crumbs to it... a little bit of lemon juice. And I coat my chicken with it.
Put it in the oven for half an hour or something along with some vegetables and stuff.

Try stroganoff

Brown hamburger and drain. Add a packet of onion soup mix and a bit of water, heat till the mix is soft. Mix in a container of sour cream, a can of cream of mushroom soup and some salt, pepper. Mix well and add water or milk to get to the right consistency. Serve over cooked noodles or rice.

Eggplant, Sausage, and Ziti Casserole

1 large eggplant, cut crosswise into 1/3-inch thick rounds
1/2 cup olive oil, plus more as needed
Salt
Freshly ground black pepper
1 cup chopped yellow onion
1 pound Italian sausage, removed from casings
2 tablespoons tomato paste
1 (28-ounce) can whole Italian tomatoes, crushed, and their juices
1 teaspoon Italian seasonings
1/2 cup pitted black olives, coarsely chopped
1/4 teaspoon crushed red pepper
1/4 cup minced fresh basil leaves
4 tablespoons butter
4 tablespoons flour
2 cups whole milk
1/8 teaspoon freshly grated nutmeg
1/2 cup grated Parmesan
8 ounces ziti, cooked according to package directions and drained
1 cup grated mozzarella

Preheat the oven to 375 degrees F. Lightly grease a 9 by 13-inch casserole dish and set aside.
I
n a large skillet over medium-high heat, heat 1/4 cup of the oil. Add the eggplant in batches, seasoning on both sides with salt and pepper, and cook until golden, adding more oil as needed. Transfer to a plate as they cook, and set aside.

Heat 2 tablespoons of the remaining olive oil in a large skillet over medium-high heat. When hot but not smoking, add the onion and sausage, and cook, stirring, until the sausage is browned and the onion is soft, about 6 minutes. Add the tomato paste and cook, stirring frequently, until it begins to brown, about 1 to 2 minutes. Add the tomatoes, their juices, the Italian seasoning, black olives, 1 teaspoon of salt, and the crushed red pepper. Reduce the heat to medium-low and gently simmer, uncovered, until the flavors marry and the sauce slightly thickens, about 20 minutes. Remove from the heat. Add the basil and adjust seasoning, to taste.

Meanwhile, melt the butter in a medium saucepan over medium-high heat. Stir in the flour and cook, stirring constantly, until thickened and forms a light roux, about 2 minutes. Whisk in the milk and, whisking frequently, cook until the sauce is thickened and smooth, about 4 minutes. Remove from the heat and season with the nutmeg and salt and pepper, to taste.

Arrange half of the eggplant slices on the bottom of the casserole, overlapping as necessary. Top with half of the cooked pasta, then half of the sausage-tomato sauce. Place another layer of eggplant slices on top of the sauce, then layers of pasta and sausage-tomato sauce. Pour on the white sauce, then top with the grated mozzarella and Parmesan.

Bake for 1 hour, or until puffed and golden brown on top.

a classic spaghetti~ yes...this is how i make mine and it is fairly easy and soooooooo delicious too~
get ground beef the lean kind...and maybe a lil mixture of ground veal also if u like...i do that sometimes...
extra vigin olive oil, fresh garlic 4 cloves, bell pepper chopped good, olives(black), mushrooms (fresh) , onions 2 small ones
fresh basil(optional)
or dried itaian seasoning that has basil rosemary and oragano and garlic powder
anise seed and/or fennel seed (optional) but goooooooood!!!
2 glasses of red wine
2 tablespoons of suga
1 med size can of tomato sauce and
1 lg jar of classico pasta sauce (yummmy) that brand is good and not expensive
get the veggies (onion garlic bellpeper and mushrooms andolives and olive oil and saute then throw the meat in and brown it good the add the red wine saute more then add the tomato sauce and pasta sauce then add a lil more olive oil
let it simmer for about 45 min to hour until veggies r soft
the boil the noodles and voila!
u can get parmesan cheese too to garnish it if u like

and of couse garlic/cheese bread
wine
and a salad w/italian dressing voila!
i know it is typical but tell u what it is good

this is really easy

get 2 serlion steaks just the size of a plate is good buy on sale you dont have to have a lot
4 tomatoes diced
1 onion diced
2 cloves garlic diced
2 sweet bananna peppers
juice of 1 lemon ,,salt to taste
1 bunch celantro chopped
make the salsa and add the lemon
grill onions and green peppers on a grill pan with zuccini
grill the steaks
make a salad
have corn on the cob grilled leave husks on but peal back and remove the hairs add butter and garlic salt grill 10 min
warm corn tortillas on the grill or flour 3 per person
get some hot peppers for those who like it hot! chopped in slices
slice the steak in strips add salsa green peppers ,onions roll and eat use about 4 thin strips of meat each taco and about 2 tsp salsa
have the salad ready with all the trimmings and a few different dressings
sour cream if desired cheese shredded can be used for the salad and the tacos
3 tacos is plenty and with the other things to eat may be to many start with 2 and if they want more then its up to them
for dessert just have grilled fruits like pineapple and banannas etc then remove and sprinkle with butter brown sugar and /or honey

How about Creamy Pesto and Sausage Lasagna!!!
Pesto
Cup of Basil
Half Cup of Italian Parsley
1/4 cup of almonds
4 cloves of garlic.
1/4 cup of parmeasan
1/4 cup of Olive oil (but I would actually leave out oil)

Chop Ingredients in a food processor or Blender. Set aside.

Cook about a half pound of Italian sausage with onions. Add a pint of heavy cream and 2 table spoons of the pesto to the sausage. Last add sliced mushrooms to the cream sauce. (If you want the sauce thicke just add little flour to thicken.)

Layer you lasagna like you normally would and add the remaining pesto by smearing it in each layer, than you sauce and than a layer of cheese and repeat for each layer.


I don't normally add cheese to the last layer until I'm finished cooking but that's up to you. Just remember to garnish the top with shaves of basil for a nice presentation.

Serve it with your favorite garlic bread and a glass of Chardonnay.

I made a really good Eggplant Parmesan this morning.

3-4 Large Eggplant
8 cups Motzarella Cheese, shredded (I used more)
Spaghetti sauce
4 Eggs
1/4 Cup Milk
3 cups plain or Italian bread crumbs
1 cup flour
Crisco for frying

Peel eggplant and slice into very thin slices LENGTHwise.

Beat eggs in a large shallow dish, incorporate milk.

Put bread crumbs in another shallow dish.

Put flour on a paper plate.

Cover one eggplant slice at a time in the flour, dip in the egg mixture and then coat in bread crumbs.

Fry in hot crisco until very brown & crispy.

Cook all the eggplant this way.

Layer to drain on paper towels.

In a cake pan, (I used a loaf pan for 1 eggplant / 2 people)
sprayed with some Pam, put some spaghetti sauce on the bottom.

Place a layer of fried eggplant down.

Cover with sauce according to your taste.

Top with Cheese.

Continue layering, lasagna style, ending with the cheese & sauce.

I then put it in the fridge to set up for a couple hours.

I then put it in the microwave for about 5 minutes, this cut my baking time way down. I did this to heat throroughly

When ready to bake, cook at 350 F for a good 60 mimutes or until the top cheese becomes nicely browned.

Serve with some garlic bread.

Have fun on your getaway!

Why not bring your crockpot to the beach, throw in all the ingredients for a savory, delicious beef stew, and let it cook while you ALL get to enjoy yourselves. Serve with crusty rolls and a ready made cheesecake or ice cream or cookies, etc.

BEEF STEW
INGREDIENTS
1 1/2 pounds cubed beef stew meat
3 tablespoons all-purpose flour
3 tablespoons shortening
1 teaspoon salt
1/8 teaspoon ground black pepper
4 cups water
1 onion, finely diced
1/4 teaspoon paprika
1 clove garlic, minced
1 teaspoon Worcestershire sauce
1 bay leaf
3 carrots, quartered (or more, to your liking)
3 potatoes, peeled and quartered (large-ish)
1/4 cup all-purpose flour
1/2 cup frozen corn kernels (or canned) (last 30 minutes)
DIRECTIONS
Dredge beef in flour and then, in a medium stock pot, brown beef on all sides in shortening. Add salt, pepper, water, onion, paprika, garlic, Worcestershire sauce and bay leave. Bring to a boil, cover and simmer for 2 hours or until meat is tender.
Add carrots and potatoes and simmer for 45 minutes or until tender.
Remove bay leave and meat from stew, add 1 tablespoon flour or cornstarch and mix, in order to thicken stew. After mixing let sit for a few minutes to thicken, if not to desired thickness add more flour or cornstarch and repeat.
Once thickened return meat and add corn to stew, heat through and serve.
If you use the crockpot, you can brown the beef at home and just put everything else in the crockpot and set on low for 6 hrs.

You can make so many different combos to please everyones tastes, my family's favorite happens to be Ham & Pineapple with teriyaki basted on .. Quick and easy!

How about hamburgers or bbq's chicken breasts and a nice seven layer salad:

layer lettuce, thawed frozen peas, onion rings, celery, sliced hard boiled egg, bacon crumbled, mircle whip or mayo with a little sugar added, and topped with shredded cheese.

For dessert: Strawberry shortcake and cool-whip
