Question:

What's your favorite quick, easy dinner recipe?

Either something you make quickly or make ahead that reheats quickly and well? With summer coming, we have a very full schedule with sports. What do you make in just a few minutes when your day is packed?


Answers:
Fettuccine Alfredo.
In a pan saute 2 TB. of finely chopped onions in 1 tsp. butter for 5 min. Then add cream and bring to a boil and boil for 5 min. Then turn down heat to low and all 1 cup Parmesan cheese (best if fresh). Take off heat and pour over prepared noodles. (noodles can be made ahead of time or at the same time)

Also, It is better than store bought sauce!!!

Grilled Cheese

Spaghetti. Boil some pasta, heat some sauce, boom you're ready. And you can put in a container and heat it the microwave very easily.

Good old meat loaf. Good with sandwiches, crackers, chips. Taste good either cold or hot, to me anyway. Bake it ahead of time and freeze them. Put them in single serving containers, like small baking foils.

Salads

You can cut your veggies ahead of time or buy them already washed and prepared. You can do so many things with salads

Just to name a few:

Seafood
Ceasar - with any kind of protein you desire
Cobb
Taco Salad
Spinich
Greek
Asian -chinese chicken

If my day is really packed, then normally, I'll just either make a meal in the slow cooker so it's ready by the time I get back or make a hearty salad--prewashed salad, can of water chestnuts, toss in some grilled chicken (I usu. have some since I always have grilled meat prepared over the weekend when I have time), and some Balsamic vinaigrette, then garnish with ready-made croutons and serve with Campbell' or Progresso soup/broth.

I'm a big fan of pasta, so I like this chicken pasta thing, where all you do is cook chicken breasts in a large frying pan, and then add approx. 2 cups of chopped up onions, red peppers, yellow peppers and zucchini, then you also add in 1 can of celery soup, and like a cup of water (maybe a little more), you mix this all in the frying pan, and then add in noodles(I use rotini), and some salt, pepper, basil, and Parmesan cheese. Let it cook for a while and then your done :)...also if that's too much, you can always just cook some noodles, and then add Parmesan cheese, butter, and salt and pepper, that's super easy(I add lots of cheese)!:)
