What's your favorite crockpot recipe?
We don't have air conditioning, so in the summer I like to use the crock pot a couple of times a week since it doesn't heat up the house. What's your favorite quick, easy, cheapish thing to make in your slow cooker?

We don't have air conditioning either, so I've had to find a lot of crockpot recipes. This one for macaroni and cheese is my absolute favorite. I made it for Easter, and everyone keeps asking for it.
All Day Macaroni & Cheese
8 oz elbow macaroni, cooked and drained
4 c shredded sharp cheddar cheese (I use mild)
1 (12 oz) can evaporated milk
1 1/2 c milk
2 eggs
1 tsp salt
1/2 tsp pepper
Place the macaroni in crockpot that has been sprayed with nonstick cooking spray. Add the remaining ingredients except 1 cup of the cheese; mix well. Sprinkle with the remaining 1 cup of cheese and cover. Cook on low setting for 5 to 6 hours or until mixture is firm and golden around the edges. Do not remove the cover or stir until it has finished cooking.
crockpot carnitas or pulled pork depending on your tastes and region. Just get yourself a good old cheap cut of Boston butt pork shoulder. For carnitas I add a can of beer and a cut up orange. Rub some salt pepper and chile powder on the shoulder and cook as long as you can stand on low before the smell of the cooked pork makes you too hungry. At least 6-8 hours but I've done it for 12-15 hours. Then get some soft tacos and favorite taco fixings and your set. For pulled pork just cook the shoulder with the beer if you want and salt and pepper, then you can finish with your favorite bbq sauce at the end. Super simple and great moist pork.
For the carnitas I like them crispy so I fry them up in bacon fat afterwards, but I'm a bad boy.
