Any ideas on what to pack for a picnic lunch?
I'm looking for simple but yummy things- I like to cook, but we're going tomorrow, so I don't have a lot of time... thanks~

I like to make traditional sandwiches, but jazz them up by making them in wrap form. Chicken, tuna, or egg salad, deli meat, even peanut butter and jelly seems special in a wrap. You can use soft tortillas, pita bread, or actual flatbread. Also, cubed meat and cheese with crackers is easy, keeps well, and whenever I take it on a picnic or field trip with my kids, the other kids are jealous and beg for some! Of course cut fresh fruit and veggies is a good option on the side.
Just get deli sandwiches and beer
A frittata is great at room temperature, and very portable.
Foccocia Subs
1 large Foccocia Bread
salami/porchuttio/mortetella
fontina cheese
peperonchini
tomato
thin sliced red onion
put all ingredients in bread, top with vinegar/oil dressing.
cold pasta salad
multi color springy pasta
black olives
mozerella cheese (cut in chunks)
salami, slice in thin slices
cherry/grape tomatoes halved
toss in some dressing o f your choice
Potato Salad, sandwiches on crusty bread rolls, muffins, fruit, juices and water, coffee or tea, quiche, cold chicken with salad, dips with veggie sticks
Mini chicken Caesar salads.
bake bread in muffin tins. When cool remove. Fill with chicken, bacon bits and cos lettuce. When you serve place dressing on top.
Spinach Salad
2 tbsp. balsamic vinegar
1 tbsp. olive oil
1/8 tsp coarse ground black pepper
3 cup fresh baby spinach leaves
1/4cup sliced mushrooms
1/4cup yellow grape tomatoes/halved
1 sml. red bell pepper sliced into strips
medium bowl, whish vinegar, oil and black pepper add spinach and toss top with mushrooms, tomatoes and red bell pepper strips.

Potato and bacon salad
1 pound sml. red potatoes
boiling salted water
8 slices bacon cooked and crumbled
4 green onions chopped
3/4cup mayo
2 tbsp lemon juice
2 tbs p chopped parsley
salt and pepper to taste
3 tbsp chopped chives
Cook potatoes in boiling salted water to cover potatoes until fork tender 15-17min..drain and cool slightly, cut potatoes into halves or quarters, combine warm potatoes, crumbled cooked bacon and onions in large serving bowl cool to room temp. blend mayo , lemon juice, parsley salt and pepper in sml. bowl, fold into potato mixture put in fridge. until ready to serve sprinkle with chives.

cold chicken and ham, patota salad, fruit cocktail or fresh fruit cut into bit size pieces, buns butter them before you go and a nice wine
Sliced cheese & sausage and crusty bread, crudites and fresh fruit-hard boiled eggs maybe.
Prepare the fixings in advance and put them either in plastic baggies or in small plastic containers.
Sandwiches - use the Tumaro's tortilla chipotle wraps. Inside goes:
some mayo
some chipotle mustard
smoked turkey
cheese - organic if you can find it
live lettuce - it's awesome
red onion
sliced tomato
Assemble them by wrapping. Much more flavorful than bread.
These are my fav sandwiches and we make them often.
Bring along some cut up fresh fruits and some dark russet Cape Cod chips.
You can eat these hot warm or cold, and some tomato sauce is wonderful
Sausage Rolls.
Flaky or Short Pastry.
450 g tube of Sausage Meat.
Diced Onion.
Mix sausage meat and onion with about ? cup of water.
Take one sheet of pastry and lay on the filling in the centre third.
Fold one side over and brush the other with water and press on top.
Turn over and cut into rolls 3’’ long or cut into 3 or 4.
Make 3 cuts on top of each roll and place on an ungreased baking sheet.
Brush with milk and bake about 30 minutes at 215C (425F), in a pre-heated oven.
