What's an effective way to keep the top of a cheesecake from cracking?!


Question:

What's an effective way to keep the top of a cheesecake from cracking?

I can't seem to figure out how to keep a cheesecake from sinking and cracking as it cools. Any help I can get would be appreciated.


Answers:
What you do is you take a pie pan and fill it with water. You then put an oven rack under where you are going to put the cheesecake. Put the pie pan of water on the rack directly under the cheesecake and then bake according tho the directions. The moisture will prevent the cheesecake from drying out and cracking.

The best way to keep it from falling and cracking once it is finished is to leave it in the oven with the door open for about a half hour to an hour before moving it.

let it cool for about another hour and then refrigerate it overnight.

Then before you releast it from the spring form pan be shire to run a knife under hot water and run it along the edges. Then it will be safe to release from the pan

It cracks when the oven is too hot and it rises .
Bake the first 1/2 hour at 350 and then turn oven to 100 degrees.for about 1and 1/2 hours.
Test with cake tester in the middle ,then cool .

Have you tried cooking in water baths? :)
