Boil the potatoes and cut into large chunks. I prefer new potatoes or redskins, and I prefer to peel them once they're cooked. For small potatoes like these, use about 3 per person. Add chopped hardboiled egg, celery and onion (or chopped scallions for a milder taste and more color). I make my dressing with equal portions of sour cream and mayo (you can use reduced fat - don't use fat free). I add a little dijon mustard, salt and pepper. Mix the dressing into the other ingredients while the potatoes are still warm, if you can. This helps the potatoes absorb the dressing. Taste and add salt, if necessary.

dice potatoes and celery into a bowl and add enough mayo to lightly coat the potatoes as well as a few squirts of mustard (you'll want a yellow tint to the mayo) mix together well and add salt and pepper to taste.

Best served cold! Enjoy.

This is not very specific, but it is how I make mine. Boil potatoes in the skins until tender (about 20 minutes). Peel and chop into cubes. Add hard boiled eggs chopped (about 1 egg for every 2 potatoes). Mix in sweet relish and pimentos. Make a dressing of miracle whip and a little prepared mustard and a tbs or so of sugar. Add a little milk if the dressing is too thick. Pour this over your potato mixture and salt and pepper to taste. It is better if you let it sit in the refrigerator overnight. You can use mayonaise if you prefer it to miracle whip salad dressing.

I don't know if you'd like it, or if this is just the normal recipe for potatoe salad but my mum makes potato salad and all she does is mash up hard bolied eggs, put in the cut up potatos(obv.), some mayonaise, and then she adds cut up green onions...every so often she puts curry powder in it (but thats only good if you like curry). I always have that without the eggs...I'm just not an egg person. Oh, and a friend of the family does that recipe, without the eggs, and adds a baby bit of vinegar, I don't know how good it is, but she likes it :)

1. Boil your potatoes... or microwave them - whatever's easiest. Chop into chunky cubes.

2. Fry up a little diced onion and diced bacon.

3. Hard boil 3-4 eggs and chop up.

4. Stir potato salad dressing (store bought is fine), the bacon mixture, and eggs with the potatoes (not too vigourously so you don't break up the eggs too much).

5. Garnish with chopped up parsley or chives.
