1 boneless pork loin roast, about 3 to 4 pounds
1 teaspoon garlic powder
1 teaspoon onion powder
1 1/2 teaspoons dried thyme
4 to 6 medium potatoes
2 tablespoons olive oil
1 teaspoon thyme
1 to 2 teaspoon freeze-dried or fresh chives
1/2 teaspoon garlic powder
salt and pepper, to taste
Rub pork loin with 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 1/2 teaspoons thyme, then sprinkle with salt and pepper; place pork loin in a shallow roasting pan. Roast at 325° for 50 to 55 minutes. Meanwhile, peel and quarter potatoes; cook in boiling water for about 10 minutes. Drain, let cool, and place potatoes in a large bowl; toss with olive oil, 1 teaspoon dried thyme, chives, 1/2 teaspoon garlic powder, and salt and pepper. Place potatoes around pork loin; roast an additional 45 to 60 minutes, or until pork registers at least 155° on a thermometer.
Cover roast pork loin with foil and let stand for about 15 minutes before slicing.

GRILLED PORK LOIN
2 to 3 lb. boneless pork loin or substitute
thick pork chops
Meat tenderizer
Garlic powder
1/2 stick butter
2-3 tbsp. Worcestershire sauce
Tenderize meat. Sprinkle lightly with garlic powder. Melt butter and add Worcestershire sauce. Brush meat with Worcestershire mix on both sides. Grill over hot heat, turning only once. Baste once per side while cooking.
Roasted Pork Loin
3 cloves garlic, minced
1 tablespoon dried rosemary
salt and pepper to taste
2 pounds boneless pork loin roast
1/4 cup olive oil
1 cup white wine
1 1/2 cups chicken broth
1/4 cup finely chopped onion
Preheat oven to 350 degrees F (175 degrees C).
Crush garlic with rosemary, add the onion, olive oil, salt and pepper, run it in a food processor or blender and make a paste. Pierce meat with a sharp knife in several places and press a little of the garlic paste into the openings. Rub the meat with the remaining mixture.
Place pork loin into oven for about 1 1/2 hours, About 1/4 through the cooking process, add a 1/2 cup of chicken broth and 1/2 cup of wine to the bottom of the roast, and about 20 minutes later, turn the roast. Cook the roast until the meat thermometer reads 155, remove and cover it with foil for about 10 minutes. I recommend using a meat thermometer, cooking time really depends on the cut and size of your meat. I added more chicken broth and wine to the drippings in the pan, a touch of flour to thicken.

Keep the loin whole & split it down the middle to make a pocket, think pita. Stuff that with the following mixture & tie up like a roast to keep the filling in.
Filling;
Softened butter, two sticks should do ( depends on the the size of your loin) mixed with some salt & pepper. Then add some chopped basil, oregeno & smashed garlic cloves. Slather that in there & lay on some sprigs of fresh rosemary then tie up & grill.
I start it out by grilling it directly to 'sear' it ,then it gets put in a throw away aluminum pan baste with the butter that melts out & finish it off directly over coals so it get's crispy & yummy.
Try using some Jamacian Jerk seasoning (That's for the next time I do this) or cajun, a curry filling sounds good too.
Any spices that suits you. I'd like to try one wrapped in bacon.
Depending on your coals/oven temp it should take from 1 to 3 hours. I go by internal temp & feel. Let rest for 20 mins before slicing.
Im a chef and when i saw the answer from user Proud to be 51.........i was amazed. Thats exactly how i do it minus the wine but i think the wine will add an excellent flavor!!! Maybe try a mild white wine like a Pi-not Gerigio, or a Chardonnay. Pork loin is a full flavored and tender meat and all those ingredients (and measurements) will not over power the meat. Also you could maybe marinade the Loin in that then sear it on a grill before cooking in the oven, but either way it will come out awesome and good luck!!!
