Question:

Homemade tomato sauce from canned tomatoes?

A buddy of mine used to make a killer sauce from canned tomatoes. Of course we would be busy gabbing and I never paid attention....
He opened a can, threw a few spices and oil in, but what else would he have added while I wasn't paying attention?
(he's moved which is why I'm asking here)

Here is my basic marinara sauce ...Killer and super easy! You can always tweak the herbs a little to suit your tastes...

1 (28-ounce) can plum tomatoes, including liquid
3 tablespoons olive oil
1 onion, minced
2 garlic cloves, minced
1 (8-ounce) can tomato sauce
6 basil leaves or 1/2 teaspoon dried basil, crumbled
Salt
1/2 teaspoon red pepper flakes, or to taste
1 pound linguini, cooked according to package directions
Freshly grated pecorino Romano

Transfer the tomatoes and liquid to a bowl and gently crush the tomatoes with your hands.

Heat the oil in a saucepan, set over moderate heat until hot. Add the onion and garlic and cook, stirring occasionally, for 5 minutes. Add the tomatoes and liquid, tomato sauce, basil, salt, and red pepper flakes, bring to a boil and simmer for 15 minutes.

Meanwhile, cook the pasta. Drain the pasta and transfer to a large bowl. Add sauce and toss to coat. Top with cheese.

Simple Tomato Sauce

1/2 cup extra-virgin olive oil
1 small onion, chopped
2 cloves garlic, chopped
1 stalk celery, chopped
1 carrot, chopped
Sea salt and freshly ground black pepper
2 (32-ounce) cans crushed tomatoes
4 to 6 basil leaves
2 dried bay leaves
4 tablespoons unsalted butter, optional

In a large casserole pot, heat oil over medium high heat. Add onion and garlic and saute until soft and translucent, about 2 minutes. Add celery and carrots and season with salt and pepper. Saute until all the vegetables are soft, about 5 minutes. Add tomatoes, basil, and bay leaves and simmer covered on low heat for 1 hour or until thick. Remove bay leaves and check for seasoning. If sauce still tastes acidic, add unsalted butter, 1 tablespoon at a time to round out the flavors.

Add half the tomato sauce into the bowl of a food processor. Process until smooth. Continue with remaining tomato sauce.

If not using all the sauce, allow it to cool completely and pour 1 to 2 cup portions into freezer plastic bags. This will freeze up to 6 months.

He first started by adding a piece of shank bone meat in the pot with a one cup of water. Next , he added the canned tomatoes, then garlic chopped fine,rosemary,thyme, and oregano, black pepper,salt, chopped onions,and virgin olive oil.Simmer on low heat for a hour.

just suate some garlic and onions, throw in a few cans of tomatoes, add a bay leaf, then just play with it. put whatever you like in it, basil, oregano, anything. soon you will find out what you like and then can tailor it to your needs.
