yes there is a difference. high is hotter faster, low in not as hot, longer.
say you have a recipe and can do it in 4-5 hours, go high. you can take the same recipe, and say you have to work that day, put it on low, and it should be ready when you get home from work, say 6-8 hours.
When you cook on low you should let it cook all day or however long the recipe says to cook it. However if you cook on high your food could be finished in 2-4 hours. just look at the recipe and see how long it says. i usually cook everything all day on low.
the only difference is how long you want to cook for and at what temp. for instance... a pot roast that you want to cook all day would be left on low while you were at work. if you came home and wanted to start a pot roast at 3 pm to eat at 7pm-- you would use high to speed the process. whereas, high for eight hours might torch the recipe. it varies depending on the recipe. of course, if serving food from a crock pot at a function where the lid will removed -- you leave plugged in on high to retain the heat.
If there were no difference, why would they put the dial on the thing?
Cook on low ,because it wouldn't burn the food ,and will retain the flavors better, than on high.
It is best to cook on low, but it really comes down to is how much time you have.
